The correct name is paella. Paella used to be how they called the frying pan and it was originated in Valencia, thus the Paella Valenciana. It really started with people and neighbors gathering basic and homegrown edible things they had on their house and they cooked a big dish for everyone. Since it started in Valencia the meats in it mainly consisted of chicken, rabbit, pork, chorizo and things found inland. As it spread along Spain and colonized countries the dish always changed ingredients to fit in what was available in that region. So coastal communities and may of the islands had their seafood paella with shrimp, lobster, oysters, crab, mussels etc... Besides the meats the basic ingredients are rice, saffron and olive oil. If youre making this make sure you get "socarrar" or "pegao" at the bottom of the pan. Believe me, you will never forget my recommendation.
