I'm having it for the first time tomorrow at a very nice French restaurant. Are there any dishes that compliment escargot?

Yes,
Not to sound arrogant, But it is prepared whatever way the chef decides to prepare it...order it that way, very rarely is it still served in the shell as portrayed in the movie "Pretty Woman" usually sauteed with garlic, shallot, fresh herbs, and finished with white wine and a touch of cream, I have also deglazed using Pernod (Licorice tasting) but just a touch to compliment.

In advance by "snail mail"! Sorry. I couldn't resist that (happened to Me when I asked a Friend about Escargot). The best, quickest and least complicated way is to ask for a "Chef's suggestion from the waiter". They cook it, present it so they know how best to serve it.

you eat escargot with nice bread to soak up the garlic butter
(it normally is an appetizer not an entrée)

I'd order a nice clean bucket with it, so after you manage to gulp one of the nasty little mongrels down you'll have somewhere to throw up in.
