Whatever you want...I really like brocolli, carrots, and onions, various colors of bell peppers. This is a very visually pleasing mix.
When you cook it, try to get all the pieces of food the same size, even if they are not the same shape...they cook better. About one inch chunks.
I like stir fry veggie mixes. Frozen.
I also like bamboo shoots, water chestnuts, and chow mein noodles on top.
AND there is fruit for a good twist or to mix a sauce. Anything really, but mandarin oranges and pineapple are pretty common. You could try peach or mango.
For meat, try round steak chunks. Or pork chops in pieces. Or stew meat with tenderizer. Or of course, chicken.

I really like a lot of produce in my stir frys, like lots of onion and bell pepper, some thinly sliced carrots for nice color, like that. Probably chicken as the meat, and some sort of teriyaki or soy based sauce for the stir fry.

broccoli, shitoki mushrooms, bamboo shoots, water chestnuts, a red or yellow bell pepper heck use them both, some carrots, some onion, and some firm tofu chuncks. near the end put the bean sprouts in so they still have a little crunch to them. and don't forget the soy sauce.
this is what i'm making for dinner tonight.

i just made a stir fry with red, green & yellow peppers, onions, rice, zuchinni and yellow squash
then get some stir fry sauce...so yummy

fried tofu cubes, fresh green beans, onion, mushroom, zucchini, spinach, artichoke hearts, red pepper and some summer squash. Season it with soy sauce, salt, pepper and garlic powder. Enjoy!

I use celery, bamboo shoots, waterchestnut slices, and snow peas. I slice some boneless pork ribs really thin, and use a ginger/soy bottled sauce.
