If you are producing insulin then eating too much at a time could cause it to be too high other than that the possibility is that there is insulin resistance - medication can prevent shots.
If you are not producing insulin than there has for many years been an inject-able available. There is also a newer one on the market that is inhale-able.
Why high? The main reason is in portions and the fact that there is sugar in a lot of our foods drinks and condiments.
