This type of pork is known as "cha shao" in Mandarin, or "char siew" in Cantonese. Only the crust is red, which is due to the sauce it is coated and roasted in. It is often added to fried rice to make it more colourful. Other popular ways of eating it is to have it in slices and go with plain rice, or noodles.

You marinate the pieces of roast pork in a red marinade, then you slice them thinly so they're red on the outside and pink inside. It's done just for appearance.

the pork is called barbecue pork, it's marinated in a sauce that has red dye and spices in it. the longer the pork is marinated the brighter the red or pink color.

most chinese pork is roarted then basted with a chinese bbq sauce called hoisin sauce. it is red in color. chinese pride them self on the apperance of their dishes. bright colors add to the enjoyment of the dish
