I have several Peruvian cookbooks. Are you looking for something easy, or something unique, an entree or a dessert?

On www.peru.com, click on the gastronomica link. There are always several recipes (But, they are in Spanish)

One of the trademark dishes of Peru is ceviche. It is made with any of several kinds of seafood, and it is "cooked" by the acidic reaction of the fish with lime juice. For a basic variety that most Americans would like, I recommend ceviche de camarones, or shrimp ceviche.

Take the shells off about 1 pound of shrimp. Slice some onion (preferably red onion) into thin strips. Slice some hot peppers into thin slices (jalapenos work well for this) Use an amount that matches your tolerance for heat. Mix the onions and chiles and shrimp with about 1 1/2 cups of lime juice.

Ceviche is traditionally served on a leaf of lettuce and accompanied with some cooked corn on the cob and a piece of cooked sweet potato about the size of a large egg.

Peruvian Chicken 1 cup prunes, chopped 1/2 cup capers 1/2 cup olive oil 2 teaspoon salt 1 teaspoon ground pepper 1/2 cup Spanish olives 1/2 cup red wine vinegar 2 tablespoon oregano 6 cloves garlic, mashed 4-5 bay leaves Chop the above ingredients in blender or Cuisinart to make paste. Put paste on chicken pieces and place on a cookie sheet, cover and refrigerate minimum overnight, could be 2 days. Heat oven to 350 degrees. Place chicken in Corning dish and put the following on top of the chicken before baking: 1 cup chopped parsley 1 cup white wine Bake for about 1 hour. ===================== Peruvian Stir-fry (Lomo Saltado) 1 pound sirloin or tenderloin, cut into bite size pieces 1 small onion, cut into strips 1 large tomato, cut into strips 1 large hot pepper, seeded and cut into strips salt pepper 2 cloves garlic, chopped 1/4 cup dry red wine 2 tablespoon lime juice 1/4 cup chopped cilantro Place the cut meat in a bowl or dish, and season it with salt, pepper, a little bit of olive oil, lime juice, and chopped garlic. Let marinate for at least 20 minutes. Sauté meat over high heat for a few minutes until meat is no longer pink. Lower temperature to medium and add first the onion. Cook, stirring for 1 minute and then stir in the tomatoes and peppers. Cook until the onions are tender. Add the red wine and the cilantro. Cook for one more minute. Serve with white rice.

Chicken in Coca-cola


2 chicken breasts
1 teaspoon instant minced garlic (to taste)
1 white onion
2 potatoes
3 carrots
2 tablespoons margarine or butter
1 bay leaf
1 (750 ml) can Coca-Cola
1 (76 g) oxtail soup mix

Melt the butter/margarine in the pot at medium heat.
Add the garlic.
Once the garlic is browning, add your chicken pieces.
When chicken is lightly browned on both sides, add the onions diced.
Once onions are almost fully cooked, add the oxtail soup.
Stir lightly to spread the oxtail over the chicken pieces, then add half the can of coke and continue stirring at medium heat.
Boil your potatoes and carrots (seperately) in the meantime.
When the sauce has begun to thicken, add the potatoes and carrots cut into bite sizes.
Simmer at low-medium heat.
Add the bay leaf.
Taste it, if it's too sour still, add a bit more coke.
Serve warm over a bed of rice or pasta.

Arroz Tapado
3 cloves of garlic, minced
2 tablespoons of olive oil
Lemon juice
Salt
4 cups water
1 pound washed rice
1 onion, finely chopped
2 pound of slice steak
2 tomatoes, finely chopped
1 tablespoon tomato paste
4 tablespoons of raisins
5 black olives, chopped
2 hard boiled eggs, chopped
1 tablespoon of finely minced parsley

1. Sauté the garlic in oil, add a few drops of lemon juice, salt and the water and bring to a boil. Add rice and cook for 20-25 minutes or just tender
2. In other pan, stir in onions and sauté, add meat, tomatoes, tomato paste, raisins, olives, egg and parsley
3. Take a one-cup glass measuring cup and coat the inside with a little oil. Fill halfway with rice, add some meat filling and add more rice to top of cup. Invert onto a plate and carefully remove cup

Any potato recipe can be considered "auhentic" Peruvian, since that's where potatoes came from!

I have a friend from Peru and I will ask her tonight for some recipes. Is there anything in particular you would like? A main dish, a dessert, a side dish.....etc?
