my husband is now on a low cholesteral diet-which he hates,lol- and I saw tofu is great to use, but the thing is I have searched for recipes and cant find any that will be appealing to him and our children. Can anyone help me, by sending me a site that may have some great ways to use it. Or if you have a recipe you like could you email it my way? Thank you.

The best thing to do is just make substitutions rather than trying to make up completely new recipes.
for example:
For stuffed shells, mix half ricotta cheese with half crumbled silken tofu and the rest of the recipe.
For chilli, just add cubed or tofu rather than beef.
For scrambled eggs, use half the amount of eggs and equal amounts of silken tofu (they wont even notice).

Adding olive oil to your diet can help raise the good cholesterol levels.

But it doesn't have to be just tofu, you can buy veggie hot dogs, veggie sausage, veggie chicken and steak strips, veggie lunch meat, ect. Most are completely cholesterol free and much tastier than plain tofu.
My preferences (5 year vegetarian) are:
Just about all the veggie dogs are good.
Tofurkey makes the best sausage.
Morningstar Farms makes the veggie steak and chicken strips and they are fabulous!
Tofurkey's lunch meat is very good. Even my cat likes it.
Quorn makes the best "chick'n" patties, nuggets and roast.
Gardenburger makes these "riblettes" that taste sooo much like ribs; they make great sandwiches.
A lot of brands make "veggie crumbles" which is supposed to be like ground beef and it's great in italian meat sauce and tacos. My teenaged nephew didn't know it was vegetarian when he ate tacos at my house, then when I told him about it, he told his mother he wants her to make it.
Tofutti makes sour cream that so good and creamier than dairy sour cream. They also make cream cheese that's really good.

I do Everything with tofu. Your only limit is your imagination. You can use the silken to make smoothies of any sort(fruit or even chocolate)I also take the silken, whip it up with a mixer or blender and put melted chocolate chips or carob chips in(but not too hot or it will curdle) pour into a graham cracker crust and have pie!


For most anything else, use firm tofu.
I deep fry mine in a deep fryer also. Do not think you can not do this because of cholestoral, just find the rite oil for your family, I am sure there are many that are low in cholestoral, I just do not know off the top of my head. Anyhow, I deep fry it, and I usually cut the tofu different sizes depending on what I am making it for....as a snack or in stir fry. Something to keep in mind is tofu has the magical quality of mimicking whatever you cook it with. If you are not a vegetarian, you can flavor it with chicken broth and cook up an recipe you like. If you are, use veggie broth. You can soak for a bit in chicken broth, then coat in bread crumbs and bake.....voila! Chicken tenders! And if your kids are the younger set, you can even cut the tofu out with cookie cutters for fun shapes before you cook it.

Take firm tofu and squeeze out excess liquid. Grate a few large carrots and chop 1 onion. Cook veggies in cast iron fry pan (works best - don't know why) in olive oil until onions are transluscent. Clear space in middle of pan, add more oil and place crumbled up tofu there. Add a couple capfuls of Tamari Soy sauce (my fave) to tofu and cook until the tofu is browned and a little crispy. The carrots and onions will carmelize on the bottom of the pan. Mix together, eat. With the soy sauce you won't need to add any salt. I have also done this with summer squash and zucchini. It is very tasty and an easy recipe to play with. Enjoy!

I use tofu in place of ground meats. If he's a typical guy, he LOVES a good, hearty chili. Make your typical chili but instead of ground beef, use tofu (I shred extra firm just like you would cheese). Or to break him in slowly, use a 1/2 tofu, 1/2 extra lean beef and slowly eliminate the beef. This could work for tacos, lasagne, any place you'd use a ground meat. I also BBQ it much like a souvlaki stick. Marinate it in a favorite vinigrette or greek dressing, thread it on a skewer, and BBQ. I like to BBQ it with a red onion piece between each piece of tofu for extra flavor. The trick is to introduce it slowly. I hated it at first until I learned to use it. Take his favorite recipes and make sublte changes. It's great in stir frys too. Crumble it for that, and try the 1/2 and 1/2 trick there too until he gets used to the texture. I hope this helps!!

It takes good stir fried with mushrooms, i also tried using a little curry powder and onions with it, good luck with that!
