VEGAN CHILI RECIPE:
Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired
Directions:
Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.
Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.
Serve with grated cheddar and cashew nuts, if desired.
This recipe for Vegan Chili serves/makes 4
Have not tried this, but sounds good.
Bean Burrito Layers
Ingredients
1/2 c Green Lentils; dried
1/4 c Pinto Beans; dried
1/4 c Red Kidney Beans; dried
1/4 c Baby Lima Beans; dried
1 Onion; medium
4 Garlic Cloves
2 Jalapeno Peppers *
1 tb Oregano; dried
1 tb Chili Powder
1/4 c Coriander Leaves; chopped
6 oz Monterey Jack Cheese; grated
6 Flour Tortillas; 10
1 Tomato; medium, chopped
1 Lettuce; shredded
1 Salsa
Instructions
1. Rinse lentils and beans, discarding any that look suspicious, and soak in clean water 4 - 6 hours, or overnight. Put into medium saucepan, bring to boil and simmer, covered, 30 minutes. Add water if necessary.
2. Peel and chop onion. Microwave on "High" 2 - 2 1/2 minutes until soft. [If you prefer, you may saute the onion in about 2 T. oil. I omit the oil to keep the fat content down. The flavour does not seem to suffer.] Chop the Jalapena pepper. (*) Adjust the quantity to your own taste and / or tolerance.
3. Peel and crush the garlic.
4. Drain the lentil-bean mixture. Reserve 1/2 cup of cooking liquid liquid. In a food processor puree the lentil-bean mixture, the onion, the garlic, the jalapena peppers, the oregano, the chile powder, and the coriander leaves, adding some of the reserved liquid as necessary to process. [The final puree should be quite thick.]
5. Pre-heat the oven to 325 F.
6. Assemble as follows on an oven-proof plate, pizza-pan or cookie-sheet:
7. Place a flour tortilla on the *lightly* greased surface. Cover with lentil-bean puree [4 - 5 T.]. Sprinkle with Monterey Jack cheese. Add another flour tortilla and repeat, saving enough cheese to cover the top of the final flour tortilla. Bake for 20 - 30 minutes.
8. Remove from oven and allow to "firm-up" for 5 - 10 minutes before serving.
9. Garnish with salsa, chopped tomato and shredded lettuce. Serve with rice, Couscous and / or corn.
The amount of oregano, coriander leaves, chile powder, or jalapena peppers may be varied to suit individual tastes. I use more peppers! If you're prone to "problems" with beans, add 1/4 - 1/2 t. Hing [Hing is a mixture of rice-flour, turmeric and asafoetida found in most East-Indian specialty stores. It can significantly reduce flatulence

Oh, where to start?!!
Risotto - mushroom or mixed veg.
Halloumi kebabs - chunks of halloumi, raw pepper, mushrooms and cherry tomatoes on a kebab stick, brushed with olive oil and then grilled or BBQd
Pasta with pesto - though you'll need to check that the pasta hasn't been made with egg of course.
Lentil stew - potatoes, sweet potatoes, courgette, onion, carrot, parsnip and lentils in homemade tomato sauce. Cheese topping.
There are just so many lovely veggie things!!!

Too many to ever list--- What type are you looking for?
I make most everything that calls for eggs in baking etc. and just skip the eggs--- or you can add a bit of cornstarch--- or egg replacer (available in natural food stores).
I make "scrambled tofu" for breakfast, and blend tofu with flour and a bit of sweetener and cinnamon to make french toast... and make a knock-out tofu quiche with cheese and spinach or broccoli.
google it, and you'll find a million recipes--- or buy a vegetarian cookbook. "Heaven's Banquet" is a great cookbook--- no eggs--- and everything I've tried turns out perfectly.

BABY VEGETABLE APPETISERS ARTICHOKES
Directions
375g jar artichoke hearts,
drained, halved 1 tablespoon olive paste
TOMATOES
250g cherry tomatoes
1/l2 cup (125ml) hummus
1 tablespoon chopped fresh parsley
SNOW PEAS
16 snow peas
125g packet cream cheese
1 teaspoon grated lemon rind
1 tablespoon lemon juice
50g soft butter
1 tablespoon chopped fresh dill
MUSHROOMS
16 button mushrooms
1 teaspoon olive oil
10g butter
1 teaspoon curry powder
1/4 cup (40g) chopped macadamias
Artichokes: Top each artichoke half with 1/4 teaspoon olive paste. Tomatoes: Cut tops from tomatoes, scoop out seeds, drain tomatoes upside-down on absorbent paper for 30 minutes. Combine hummus and parsley in bowl, spoon mixture into piping bag fitted with plain tube, pipe mixture into tomatoes. Snow Peas: Carefully split each pea along 1 side. Combine cheese, rind, juice, butter and dill in bowl, beat with electric mixer until smooth. Spoon mixture into piping bag fitted with star tube, pipe mix¬ture into snow peas.
Mushrooms: Remove stems from mush¬rooms. Place mushrooms, stem side up, on oven tray, brush with oil, grill until mushrooms begin to soften; cool. Heat butter in pan, add curry powder and nuts, cook, stirring, until nuts are lightly browned; cool. Top mushrooms with curried nuts.
Serves 4.
TOMATO AND MUSHROOM CALZONE
2 teaspoons (7g) dried yeast
1/2 teaspoon sugar
1/2 cup (125ml) warm water
1 cup (150g) plain flour 1/2 cup (75g) cornmeal
12 teaspoon salt
2 tablespoons olive oil
1 tablespoon cornmeal, extra
TOMATO SAUCE
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, crushed 425g can tomatoes
1/4 cup (60ml) tomato paste 1 teaspoon sugar
1 tablespoon chopped fresh oregano
2 teaspoons chopped fresh thyme
MUSHROOM FILLING
1 tablespoon olive oil
150g flat mushrooms, chopped
12 drained artichoke hearts, quartered
2 tablespoons drained
capers, chopped 1 tablespoon chopped fresh dill
Lightly oil 30cm pizza pan. Combine yeast, sugar and water in bowl, stand about 10 minutes or until frothy. Combine flour, cornmeal and salt in bowl, stir in yeast mixture and oil, mix to a firm dough. Knead dough on floured surface about 8 minutes or until smooth and elastic.
Roll dough until large enough to fit prepared pan. Place dough on pan, spread with tomato sauce, leaving 3cm border. Spoon mushroom mixture over half the dough, brush border with water, fold over other half to enclose filling; fold edge to seal. Sprinkle with extra cornmeal. Stand calzone in warm place about 10 minutes or until risen. Bake in moderately hot oven about 35 minutes or until browned.
Tomato Sauce: Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. Add undrained crushed tomatoes and remaining ingredients, simmer, un¬covered, about 15 minutes or until mixture is thickened slightly; cool. Mushroom Filling: Heat oil in pan, add mushrooms, cook, stirring, until lightly browned and liquid is evaporated. Stir in artichokes, capers and dill. Serves 4.
