You will want 1/2 cup tomato sauce or chopped canned tomatoes, about a quarter pound of shredded mozzarella, and 3-4 fresh basil leaves. Spread the tomato sauce on the dough, sprinkle with the mozzarella, drizzle with a few drops olive oil, add the basil and bake.

if you want very very easy and authentic Italian, try this. Saute some of your favorite vegetables in Extra Virgin olive oil and put them on top of pasta. Any kind of pasta is fine, but I am rather partial to Capellini. The vegetables and oil are your sauce. Top the whole things off with either Parmesan or Romano cheese. Serve this with cutlets if you'd like. Go to your local grocery store with a good deli counter. Buy a good beef roast and take it to the deli counter. Ask them to slice it about 1/4 to 1/3 of an inch thick.
When you get home, scramble 2 or 3 eggs in a bowl. In another bowl mix some unseasoned breadcrumbs with either parmesan or romano cheese. You want about equal amounts of both. Add some chopped flat leaf parsley and a little salt an pepper. Dip your slices of meat into the egg and then into the breading. When this is done, fry the meat in a mixture of olive oil and vegetable oil. Not too much oil, but don't skimp either or the breading will burn. the cutlets and pasta together will make a fantastic meal. Oh and if you want a desert buy an ice cream maker and look up some Gelato recipes!! Gelato is the greatest stuff on Earth!!

Shrimp Scampi
The only trick to this recipe is to not overcook the shrimp. I like lots of garlic and butter which results in a tasty starter to any meal.

1 Pound Of Large Shrimp
4 Cloves Of Garlic, Minced
1/4 Cup Butter
1/4 Cup White Wine
Salt & Pepper
Dash Of Red Pepper Flakes
1/4 Cup Fresh Parsley, Chopped
Garnish:
Diced Tomato (Optional)
Chopped Green Onions

Heat the butter in a frying pan over medium heat. When hot, add the garlic and shrimp. Cook just a minute or two, until the shrimp turns pink. Remove the shrimp from the pan, and add the wine. Turn the heat up to medium high, and cook until the sauce thickens. Season with salt, pepper, red pepper flakes and parsley. Return the shrimp to the pan, and cook for another minute. Serve immediately, using the garnish if desired.

Panna Cotta
Panna Cotta literally translates as "cooked cream". This is another one of my never fail dessert recipes I often make when entertaining. When I was living in Italy, if this dessert was on the menu, it was always my first choice.
2 1/2 Cups of Milk
2/3 Cup of Heavy Cream
Teaspoon Vanilla Extract
1 1/2 Envelopes of Unflavored Gelatin
1/3 Cup of Sugar

In a saucepan, combine 2 cups of milk and the the cream. Heat until simmering. Sprinkle the gelatin over the remaining 1/2 cup of milk. Remove the milk mixture from the heat, and stir in the vanilla and the softened gelatin. Pour into 6 (1/2cup) custard cups and chill at least two hours.

Topping:
1 Package Frozen Strawberries, Thawed
3/4 Cup of Sugar (or to desired sweetness)

Blend the berries and sugar together in a food processor, and strain for seeds. Place over medium heat and bring to a boil. Turn down and simmer for 5 minutes. Cool. To serve, gently run a knife around the edge of each custard cup and un mold on a plate. Serve with a drizzle of the coulis on top.

Poached eggs italiano

Ingredients:
• 1 teaspoon minced garlic
• 1 tablespoon chopped parsley
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper
• 2 tablespoons olive oil
• 1 large can (28-oz.) plum tomato's
• 2 tablespoons snipped fresh basil
• 4 large eggs
• "crusty bread"

Method:
In a large skillet, saute garlic, parsley, salt and pepper in hot oil for a few minutes (do not let garlic get too brown as it will take on a bitter taste). Pour liquid from tomatoes into skillet and continue to saute. Chop up plum tomatoes and add to skillet; add fresh basil and continue cooking for about 5 minutes. Make 4

Cranberry Biscotti

(Makes about 4 dozen)

1/2 cup granulated sugar
1/2 cup brown sugar
1/4 cup butter, room temperature
2 tsp. grated orange peel
3 eggs
3 cups flour
3 tsp. baking powder
3/4 cup dried cranberries, coarsely chopped
1/4 cup almonds, chopped

Preheat oven to 350-degrees F.

Grease 1 large or 2 small baking sheets.

In a large bowl, combine sugar, brown sugar, and butter. Beat until well blended.

Add orange peel and eggs, beating to combine.

Add flour and baking powder, mixing well.

Knead or gently stir in the cranberries and almonds.

Place dough on a lightly floured surface and divide into 3 equal portions.

Lightly flour your hands.

Shape each portion in to a slightly flattened log about 3-inches by 8 inches.

Place logs 3-inches apart on prepared baking sheets.

Bake for 20-25 minutes. Do Not Shut Off Oven!

Remove from oven and place baking sheet in a wire rack to cool 15 minutes.

Reduce the oven temperature to 300 degrees.

Transfer each log to a cutting board.

Using a serrated knife, cut diagonally into 1/2-inch slices.

Place the slices cut side down on the baking sheets.

Bake 12-15 minutes, turning biscotti over once during time.

Cool on wire rack.
