Is there anything else, like sugar or flour, that I can put in it to make it less spicy?

drop cayenne to 1/4 to 1/2 the recommened amount or check your measurements did it say tsp or Tbs. could have had an error like that could make a big difference it does happen once in a while i have mad that mistake before i used to cook for a living

Sounds like you're asking if there's anything you can do "after the fact." I've found that adding additional fat, such as butter, tends to mask spiciness. For a more healthy solution, you can also try taking about half of the etouffee, put it in a colander, rinse off all the sauce under the faucet, and then add it back into the pot. If it needs more "juice," just add more of the other liquid ingredients. Finally, eating it with plenty of bland food - rice, bread, milk - will help it go down less painfully.

Add a spoonful or so of sugar. Works well also if you add too much salt to a dish.

float some raw, sliced potatoes in it for an hour. It will help absorb the spice or add some rice

Lemon juice works for me. It also works if you've overdone it with the salt.
