White Rice Pilaf Style
Serves 8

This is a pretty basic, mild flavored recipe. If you like your food on the spicy side add some extra seasoning to the recipe.

3 tablespoons butter
3 tablespoons white onions, chopped
2 cups rice
3 cups water, hot
4 each bouillon cubes, chicken
1 each bay leaf

Melt butter in a pot that has a tight fitting lid and add the onions for about 5 minutes until tender but not browned. Stir in the rice and stir to coat the rice with butter.

Once coated, add the hot water, bouillon cubes, and the bay leaf and bring to a boil.

Once you reach a boil cover the rice and reduce the heat to its lowest setting. Cook for 25 minutes covered. Do not stir, do not look, do not worry.

Remove from heat after 25 minutes and set aside for 20 minutes covered. Do not look, do not stir, do not worry.

If you did not look, did not stir and did not worry you should now have perfect fluffy white rice.

Easy Peasy Rice Bake

INGREDIENTS

2 cups uncooked long grain white rice
6 cups water
2 (14 ounce) cans chicken broth
2 (15 ounce) cans sweet peas, drained
1 (8 ounce) package shredded Cheddar cheese
1 cup crushed buttery round crackers


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch casserole dish.
Bring rice and water to a boil in a pot. Cover, reduce heat to low, and simmer 15 minutes.
Stir 1 can chicken broth and the peas into rice. Cover, and continue cooking 5 minutes. Transfer to prepared casserole dish. Pour remaining broth over rice mixture. Sprinkle evenly with cheese and top with crushed crackers.
Bake 40 minutes in the preheated oven, until bubbly and golden brown.



Herbed Rice Pilaf

INGREDIENTS

2 cups uncooked long grain rice
1 cup chopped celery
1/2 cup chopped onion
1/4 cup butter or margarine
4 cups chicken broth
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon dried oregano
1 teaspoon dried thyme


DIRECTIONS

In a skillet, saute rice, celery and onion in butter until the rice is lightly browned and the vegetables are tender. Spoon into a greased 2-qt. casserole. Combine all remaining ingredients; pour over rice mixture. Cover and bake at 325 degrees F for 50 minutes or until the rice is done.

Rice Pilaf :
Heat a tablespoon of oil in a casserole, when the oil is hot add a pinch of mustard seeds and another of cumin. Then add thoroughly washed and drained Basmati rice ( two cups for four people) stir and add four cups of water and cook on medium heat till the water evaporates.
