I recently decided to be a vegetarian. The problem is that I find it close to impossible to get a lunch at school without meat in it unless I bring it myself. I've already gotten sick of eating peanut butter and jelly everyday and need something new to eat. Any ideas on what I can bring with me to eat? Keep in mind that there isn't any way I could heat things up with and that I'm lactose intolerant. Small amounts of cheese is ok.

Cold bean salads are yummy...chickpeas/garbanzos are especially good. Pita pockets with hummus(chickpea spread) and lot of veggies! Fake lunch meat(you can usually find this at the regular grocery stores now). Pasta salad(cold) and potato salads. Fruit salads/garden salads. Morningstar Farms meal starter strips(thawed, cold). I've had this problem for years. A lot of times I didn't have access to a microwave!

www.vegweb.com has a ton of recipes. www.peta.com has a cooking section, too! Don't be afraid to experiment.

Congratulations on making the choice to be vegetarian! This was a life-changing choice for me, and I hope that more people can become vegetarian, too.

I believe you have access to the internet, where there are many websites to help you plan a nutritious vegetarian diet. There are meat substitutes such as veggie burgers, veggie turkey, veggie chicken, veggie ham, which you can make into sandwiches, if that's what you bring to school for lunch.

For snacks, always have nuts handy. Almonds are best because they contain a lot of protein, which you need to stave off hunger pangs.

Good luck and stick to this diet! It's the best thing for you!

Veggies and a sauce to dip them in--most stores carry different flavors of vinaigrettes and other dairy-free dressings in the salad dressing section.

Make a veggie sandwich! Tomatoes, sprouts, cucumbers, onion and romaine with your favorite spread. Try using hummus instead of mayo, it's delicious and comes in lots of different flavors to add variety to your meals. There are also imitation cream cheeses made from soy available, and imitation mayonnaise, too.

Most bean-and-rice dishes are good cold. At least, I find them to be. Lots of pasta dishes are good cold, too. And doesn't everyone love cold pizza?

A fruit salad and a whole-grain roll or two is a good meal to give you energy for your afternoon.

You could also try searching vegetarian recipe sites for dishes meant to be served cold.

Good luck!

Stuffed pitta breads: wholemeal pitta breads with houmous, red pepper, cucumber and bean sprouts.

Bagel with just about anything!

A huge tub of salad - lettuce, tomatoes, raw peppers, raw mushrooms, spring onions, celery, bean sprouts, lentils and chick peas.

Pasta salad - wholewheat penne drizzled with olive oil to stop it sticking, with peppers, onions, pine nuts, pumpkin seeds.

Mouth watering yet?
