Kale Mashed Potatoes
1 1/2 pounds russet potatoes, peeled and cut into quarters
1/2 clove garlic, peeled
1/4 cup butter
1 teaspoon salt
1/2 teaspoon ground white pepper
1/2 cup milk or heavy cream, heated until warm
5 ounces frozen kale, cooked and squeezed dry
In a large pot with enough cold water to cover, place the potatoes and garlic. Bring to a boil and cook until tender, about 15 to 20 minutes. Drain well in a colander and return the potatoes to the pot. Add the butter salt and white pepper, and mash with a potato masher. Continue mashing, while gradually adding the warm milk. Stir in the kale and serve immediately.

It is very good for you. It has a lot of vitamins and other nutrients. It makes a real good soup. Boil it down in some chicken broth. Add some salt and pepper to taste and if you are not a vegitarian some sausage. Make sure you cook down the kale for quite a while as it gets softer the longer you cook it. Great in a slow cooker!

Cut up a bunch of garlic and fry it slowly in 1/3 cup olive oil.
Cut up the kale w/o the stems.
Add the kale to the garlic/olive oil and stir until the kale is coated with the mix.
Add 1 can (16 oz?) vegetable or chicken broth.
Cook until tender.
This is delicious!!! I also add a little hot sauce.

Kale is highly nutritious! To preserve the nutrients in the kale, it is best to just steam it lightly (avoid boiling it if possible). We have a vegetable steamer, but I will also stem vegetables in a metal strainer that sits into a pot with a small amount of boiling water in the bottom - top it with the lid and it makes a great steamer.
For flavor, add a bit of finely chopped onion to the kale. You can also add it to other foods: soups, stews, beans, etc.

Since Kale comes in different colors and shapes. The only Kale that I know is eatable is the dark green color with long leaves shape. As a matter of fact, it is supposed to be good for your health. You could make kale into juice combine with diff other fruits. Pretty tasty. Or you could make it into soup mixed with other type of meat such as pork, chicken. But just don't put too much of it. Otherwise it would become too fibery and difficult to drink. Enjoy!

Yes, it's delicious, but be sure, and cut the stems off, because they're really tough, and don't get soft even after cooking. I also boil my Kale, before I prepare in a soup, or any other dish. Hope your meal turns out great!

What I do with kale is chop it finely and freeze it. I throw handfuls of the chopped frozen kale in nearly everything I make - spaghetti sauce, stews, soups, stir frys, meatloaf, etc. It's the most nutritious of all the cruciferous vegetables and is definitely worth eating.

I like it steamed. After it's done stir in a little Nutritional Yeast. That sort of makes it like cheese sauce. YUM!
Kale is an excellent source of calcium.

cook it just like mustard greens, turnip greens or collard greens. bring water to a boil, add a peice of meat for flavoring. wait 10 min and add well washed kale, season with spices, salt and pepper cover and cook till tender, add vinegar if desired. if that doesnt sound ok, just use it in the compost pile.
