Many ppl have suggested pasta, & this is on the right track. I would say eggplant parmesan with red wine served after a terrific salad, crusty bread available throughout the meal, & finish with anything chocolate! This meal would not only satisfy, but actually be quite pleasing to anyone, & can be easily modified to fit even a pretty strict vegan plan.

Assuming they're ovo-lacto vegetarians, I'd go with some tacos made from frozen vegetarian ground beef substitute, pepperjack and salsa quesadillas, rice cooked in vegetable stock with onions and mild peppers, and follow it up with flan or sopapillas (make sure your guests are okay with honey before hand). The taste, texture, and appearance of the taco non-meat is very close to the meat version, so, provided that you can get your meat eaters to try it,they should be pleasantly surprised.

None of my meat-eating friends have ever complained when I make lasagna. I generally add a package of Morningstar Farms Crumblers to make it "meatier" for them. I also add a package of frozen chopped spinach to the cottage cheese or ricotta mixture, but other than that, I pretty much follow any lasagna recipe, omitting the meat. Using Barilla noodles (or another brand of no-boil noodles) makes it go a LOT faster. Add a nice salad and garlic bread and you've got a nice filling meal that nobody could possibly complain about.

i once ate at this seventh day adventisit after hours party. they had these swedish style meatballs that i swear you couldnt tell that there wasnt one ounce of real meat in them. they were made of ground portabello, finely crushed nuts and some other good stuff. im sorry i dont have a recipe, but mabey as a helpfull hint. ive made some really good spagetti w/o any meat. just pile it high with peppers, mushrooms and lots of spices and you cant lose. whatever you do, dont mess with tofu. there are few things less disgusting. soymeats arent bad. i have had soymeats that tasted as good as real meat. but i think most choices available contain at least some meat in them. anyways, mabey try a search with some of the things i mentioned on a few veg. cooking websites. and see what pops up. good eat'in !

I would have to say a veggie stir fry with egg rolls and white rice and you could also throw in some cream cheese ragoons . Sooo easy to make . For desert cheese cake served with a mango sauce served on top . With the stir Fry maybe use noodles and serve rice on th side ? that is how i would do it .

Any pasta with any meatless sauce and /or vegetables (asparagus springs to mind, or broccoli&green chili, zucchini, or potatoes and green beans with pesto).
Green gnocchi and parmesan.
Roast vegetables, baguettes and cheese platters (most vegetarians eat cheese).
Vegetable-based salads; beans as in hummus or croquettes, avocados as in guacamole or sliced with papaya, or mozzarella and tomatoes...
Pasta rotolo, boiled and sliced. Red pesto sauce.
Maccheroni timballi.
Spinach and corn cakes.
Pears and blue cheese on rocket salads.
Stromboli.
All kinds of puff pastry turnovers, samosas, sundried tomato tarts...
Fried goat cheese served on mesclun and pears.
Pasta e fagioli soup.
Risotto with porcini, saffron and parmesan.
Tofu and birdseeds?............Pleeease!

i would suggest spaghetti or pasta. Maybe a pasta bake. yummy, filling, and no meat.
or vegetarian lasagne. that is good, whether you are vegetarian or not.
with either of these, just have a side of salad or vegies.

What about crab and shrimp stuffed portabella mushrooms? Some vegetarians still eat seafood and most meateaters like the meaty texture of portabella mushrooms. Here is the recipe:
Ingredients:
2 cups Cornbread, Crumbled
1 cup Fresh Bread Crumbs
1 Egg
1 cup Chopped Onion
1/2 cup Chopped Celery
1 Bell Pepper Chopped
1 cup Flaked Crab Meat
1 cup Salad Shrimp, Chopped
1/2 teaspoon Tarragon Leaves
Salt and Pepper
2 Cloves Garlic Crushed
6 Portabella Mushrooms, Stems Removed
1/2 cup grated Parmesan
3 tablespoons Melted Butter (Unsalted)
1 cup Grated Mozzarella Cheese
3 tablespoons Olive Oil
3 tablespoons Balsamic Vinegar
Directions:
In a Large pan combine celery, onions, peppers, garlic and butter, cook until vegetables are just soft, combine with breadcrumbs and cornbread, dice stems of mushrooms and add to mixture, add salt and pepper to taste and the tarragon leaves, add Parmesan cheese and egg, add seafood, mix well, mixture should be easily pressed into "Stuffing consistency" if too dry add melted butter. set aside In a large skillet combine olive oil and vinegar until hot and braise your mushroom caps, until just heated through and beginning to change color. pat dry, Divide stuffing mixture into 6 equal portions and stuff caps of mushrooms, sprinkle tops with grated mozzarella, and bake at 375 degrees F until cheese is bubbly and stuffing is "Set" Excellent First Course or Cut into 1/4 for Appetizers.
