One of my favorite chicken recipes for guests is chicken with prosciutto. It's dead simple, very elegant and will impress anyone.
Take boneless, skinless chicken breasts. Cover with a little pesto from a jar (classico for example), wrap a slice of proscuito (most deli sections have it either pre-packaged or by the slice) over the top, tucking the ends underneath..Place in a baking dish. Bake at 350 for about 35 minutes. I served with asparagus (get a bag of frozen - tastes great and no fuss cooking) and noodles tossed with a little butter and parmasan cheese.

I would say marinate steak in the dressing...they will go together better. Put a pat of butter on each steak (it makes it look fancy). Make garlic bread with it. Slice an italian loaf in half, spread with butter, a little chopped garlic or garlic powder, and sprinkle with basil. Wrap in tinfoil and put in the oven at 350 Fahrenheit for about 10 minutes. When I made it, it looked like Emeril did it!

Grilled chicken breast, green salad, fresh green beans, baked potato with everything on side, tea, coffee, dinner rolls, and chocolate pudding with cool-whip on top(in a tall glass)Whatever you feed them they will enjoy,do a dinner that will not keep you in the kitchen--just be able to keep in the oven on warm. All at top are easy and can be put in oven on low without any drying out...Happy Eating........

The best thing to do is to make something that you do well - don't try any new recipes unless you're absolutely sure they'll come out perfectly (best to be safe if you're trying to impress). Also, have a couple of hors d'oeuvres - like olives or a cheese plate. A light dessert would be nice - do something easy, like homemade brownies with vanilla or peanut butter cup ice cream. A glass of wine is always appreciated. Good luck!

It sounds good to me! Why not use boneless chicken to make it easier? As for sides, spinach sauteed in garlic and a garden salad would be good choices.
That's so nice of you to make dinner for your parents!
