You can freeze ricotta cheese, although the texture will suffer. You can certainly freeze it for six months. Thaw it in the refrigerator for a day or so. When thawed, there may be some liquid on top, which you should stir back into the cheese.

Yes because you can freeze lasagna if you make it. You won't refreeze it once you use it after it's been frozen unless you cook it first. It may be watery when you thaw it out, just mix it up really good and take the extra water into consideration, maybe pour ir off first. Give it room in the container to expand when freezing also.

Absolutely it can be frozen and will hold up good. Just make sure you temper it slightly before baking. (don't thaw it all the way) If your leftovers are small enough go directly from the freezer to the oven.

yes remove extra moister or ricoota juice as i call it then air tightly close the lid then freeze only leave in the freezer max 6 months

absolutely...the texture wont be exactly the same when it defrosts, but with all that other stuff in there, you'll never notice.
