When I was in del Rio recently I saw it packaged in the type of bags that you can suck all the air out of and seal.The citrus in the mixture kept the avacado light green.It was very flavorful but I noticed it only had a two week shelf life.Probably because the citrus slowly deteriorates the firm flesh of the avacado.It was in the refrigerated section.

You can can it yourself. Tomato products are very easy due to their high acid level. Just buy some canning jars with lids and rings and wash them and heat the jars up in the oven or by boiling them (there's instructions on the box) Then heat up the salsa to the boiling point place it in the hot jar and cap it. Leave it on the counter until it's cool and check the lids by seeing if you can flex the middle. If you can't then they have been successfully "canned".
If you plan to sell them you probably have to use a commercial kitchen (some churches rent theirs out) and have health inspections. Your freshly canned salsa probably won't taste as good as the big producers though because they can use all sorts of controlled heat settings etc to achieve preserving that the home cook can't replicate. Without all sorts of equipment specialized to the industry.

the best way to preserve something like that is to put in a frigde. if you plan on selling it, put it in some tupperware, then put in the frigde. the salsa will be okay in there for about a week(from what i know). if you sell, label the salsa so that way, you know which is which....
if it's pico de gallo, w/avocado, that stuff will last a little longer then a week...but yea..
put in tupperware, then put in the frigde. if you don't want it cold, put in the pantry.

Read the ingredients on the back of some store bought bottles of salsa. When you have one ingredient in common, other than the food stuffs, you have your answer.
