it's not their food that does it, they eat it most of the time, our western diet contains alot of dairy produce and animal fats which they dont like, and we eat chinese as a treat not as a regular diet.

The reason is primarily culinary taste.
Yes, it is completely true that American-Chinese cooking is considered by most Chinese to be its own style of cooking, completely separate from traditional Chinese cooking.

Most Chinese prefer the taste of salt, and don't like overly oily foods, meaning that they generally don't eat very sweet dishes, or too much fried dishes.

Chinese restaurants in America however, cater specifically to popular American taste, which they believe is primarily sugar and oil. All of the most well-known Chinese-American dishes that people buy are either very sweet or fried.

Sweet and sour chicken, check.
General Tso's chicken, check
Chicken fingers, fried
Crab rangoons (love these), friend dumplings with cream cheese for filling, hmm, you figure out the math.

Even the vegetable dishes are made with a much sweeter version of sauce than the Chinese eat themselves. ie, basic stir fry seasoning for regular Chinese home cooking is usually just soy sauce, ginger, garlic, cooking wine, salt... but the version Chinese restaurants use adds a heapful of sugar and corn starch often is used too for thickness.

It's not that they put the meat on different parts of their bodies, the Chinese have a different preference than most Americans when it comes to eating, they don't really dig sugar and oil that much, they prefer salty food more.

That is a perversion of Chinese food..it is made to what Chinese think Western folks like. Chinese are very pragmatic in all things. The common fixtures on our menus are like special banquet meals for them. Plus they get more exercise than us...though they are starting to eat more Kentucky and McDonalds while playing Playstation.

That depends on what your orders are, i believed that every ethnic groups have their heathy and unheathy choices. In general, I felt that chinese are thinner because they don't drink much alcoholic or fizzy drinks. Alcohol numb your senses, it slows down your stoppage time to eat. It causes your stomach to produce more acid to digest food faster but where does all the energy go? Yes... your hips and bellies. Chinese restaurant don't normally serve soft drinks, it's their culture to drink tea and tea is not fattening. I think people had over emphasis on solid food wherelse the real culprit might just be the kind of drinks we're drinking.

If you have ever been in a Chinese restaurant during a slow period when the help eats, you will notice that the meal is usually not on the menu. It would be a peasant -- or soul -- fare which is cheap, simple but good. Not much fat: rice, noodles, greens, a protein (meat or fish).

Also restaurant work is very physical. The work is not heavy, but you are constantly moving. and hours are generally very long.

'Cause the Chinese are hard-working and do-a-lot-of-physical-excercise-human-beings. That's why they are so thin and healthy. But they eat the same food that you do. Do the maths.

By the way, I'm not Chinese and I do love Chinese food.

Because they eat authentic Chinese food only. They don't eat takeout Chinese food. Takeout Chinese food is cartered to North American mainstream market where people are not willing to pay for real anthentic Chinese food.

Most of and many of the Asian people are thin and small. Some of them are short. Those chinese food at the fast food shop are not really greasy for them. Many big Chinese people usually gained weight because of the rice, and the dim sum set. (shumai, pork ribs, and all those good stuff)

Eat everything in moderation. Plus no self respecting Chinese would eat batter fried meat like, sweet & sour pork, orange chicken, Gen tso's chicken. These things were made up by Chinese Americans to suit American tastes. Kinda sounds like Chicken Nuggets already dipped in sauce doesn't it? Meat is only consumed to flavor our vegetables or rice.

Traditionally the Chinese drink green tea with meals. This reduces the fat absorption. It's probably the beer or wine and not the food!

if you ate like an Asian everyday then it wouldn't . Go to an actual Asian grocery store and see what they eat . What you see in a Chinese restraint is what has been commercialized as Chinese food . basically everything on a menus is what Americans has picked out what they like . That isn't what Asian ppl eat everyday .
