I'm sure you could, but you would really start to hate eggs. Trust me, eggs is all I ate for a certain period in my life and for a while there I could barely eat them without gagging. That's all my mom could afford, along with beans and rice. Beans rice and eggs were served breakfast, lunch and dinner. I can only enjoy eggs now if I douse them in salsa. There's protein in eggs...it's enough to sustain you. Beans would be a bit better for you if you ate those everyday. Beans are great. My mom had told me if you cook it with a whole clove of garlic you won't get gassy. I never had bad gas eating it.

For a while. Eggs are very high in cholestrol so they are not a healthy diet. They will clog your arteries. Low in calories, I know, but not a healthy diet.

You could get scurvy or something from lack of vitamins/malnourishment.
