What does she like to do? Miniature golf, swim? Have her invite some friends for some fun. If she's into movies take the group to a matinee. How about a cookout and sleep over, or take her and her friends camping(if they like that sort of thing)and cook over a fire. How about a treasure hunt. Hide party favors, or whatever, and divide the group into teams and give them clues along the way, or a treasure map you make up. I remember doing this in scouts as a lad and they were great fun, besides, without knowing it we got a little walking exercise. Kind of a bigger kids version of an Easter egg hunt only with clues and whatnot.

Summer time is always great for barbeques. A beach party/luau might be fun with teriyaki, or yakitori sticks with chicken and or beef, fresh fruit salad and a rice crispy treat cake.
