The mushrooms could take on a rubbery texture if you chill them and then reheat. You could prepare the stuffing ahead of time, and then use fresh mushroom caps the day of your party.

Are you from Louisiana? That will make it a heck of a lot easier... since you know, that's crawfish capital. I'm from Louisiana - so I'll go on the assumption that you are from there, too. You need a boiler and butane. You need live crawfish - they are cheaper if you boil them yourself. You probably want some butter, corn, potatoes, beer, and crawfish seasoning (Zatarans works!) . You can get all this at your local grocery store!! TRY A& P! You should pour the beer in the boiler while you're cooking the crawfish - but you don't have to. My dad has an awesome recipe, but I can't remember all of it exactly or what to do.. but at least this gives you a starting point!
