I think Mojo sauce is like spaghetti sauce in a way - everyone has their own creation. These came straight from http://www.recipezaar.com
Mojo Sauce 1
5 cloves garlic
1 teaspoon cumin seeds
2-3 small dried chilies
salt
3-4 tablespoons breadcrumbs
1/2 teaspoon paprika
2-3 tablespoons red wine vinegar
4-5 tablespoons olive oil
1/2 cup water, as needed (about)
Using a mortar and pestle, mash cumin, garlic, and chilis with salt. The mixture should be mashed well. Add paprika, vinegar and oil, and continue to blend. Add bread crumbs and mash.
Gradually add water until desired consistency is reached.
Mojo Sauce 2
16 garlic cloves, thinly sliced lengthwise
1 cup finely slivered onions
1 teaspoon ground cumin
1 cup extra virgin olive oil
2 cups fresh orange juice (3-4 oranges)
1/2 cup fresh lime juice (2-3 limes)
2 tablespoons white wine vinegar
salt
pepper
In a medium bowl combine garlic onion cumin salt and pepper.
heat olive oil in a medium sauce pan over low heat. Add onion mixture and stir till softened about 10 minutes. Add orange juice, lime juice and vinegar and cook for 5 minutes to let flavors blend. Cool to room temp

3 sour oranges
1 head garlic, cloves peeled and separated

Chopped fresh oregano leaves
Freshly ground black pepper
Slice the oranges down the middle and squeeze the
juice. Mash a head of garlic in a morteros (a thick bowl with a mashing paddle used in Latino cooking). Add a little salt to the garlic (more than a pinch, less than a teaspoon). Add the sour orange juice to the mixture. Add oregano and pepper, to taste.

Peel and section one whole, small clove of garlic
Add 1 large table-spoon of cumin powder
Add 1 large table-spoon of paprika
Add 1 large table-spoon of sea-salt
Add a little olive-oil and grind all of it into a paste
(make sure you grind out all the lumps of garlic!)
Scrape the mixture into a blender. Use more olive-oil to get all the mixture out.
Add to the blender 1/2 a red pepper, finely chopped and blend.
add another 1/2 chopped, red pepper and blend
add another 1/2 chopped, red pepper and blend
add another 1/2 chopped, red pepper and blend (so 2 whole red peppers in the end)
add more olive oil to dilute as required or leave it as above for nice and spicey.
Garlic seems to be the only constant, so just combine flavors you like, add garlic and call it 'mojo sauce'.

in a food processor bowl or blender container combine chipotle
peppers, orange juice, onion, oregano, lime juice, honey, oil, garlic and salt.
Cover and process or blend until nearly smooth. Pour over meat.
