Obviously ask them to wear something red. You can get red light bulbs for the lighting (but don't put any in the window!!), hang red balloons everywhere, use a red tablecloth and napkins, serve red food as you've mentioned - you could offer stuffed red peppers as a vegi or 'don't like curry' option and strawberries and or jelly for pudding. Serve red wine and red cordial to drink and have red flowers in the vases.

Try some red streamers or balloons. I would do some red candles. Get some red washable highlights in your hair and it doesn't matter if you're a guy or a girl. If red is the theme, then anything goes, right? Put a red light on in the porch so when the guests arrive, they know they are at the right place. Make sure you have some red wine, too. Oh, and have a non-red room ready for those who can't handle all the red in the house. :)
Put on a red dress or tie, and have a blast! Can I come?

I love all of the RED decoration suggestions! Just something extra, how about buying each guest a pair of cheap sunglasses and fitting red cellophane over the lenses, with tape. Everyone will be "seeing red!" Also, you've got to have a red carpet where the guests arrive. Serve Big Red soda in cans, along with red, red wine. Have a contest for the most red worn. If you want to have a little fun, tell your husband that men are invited (even though they are not) and they are all to wear blue from head to toe. After a good laugh, send him out with the guys.

I'd say Red Candles, Red Wine or Fruit Punch whatever you desire, Red Velvet Cake, Red Glassware and Plates is a must. Make sure to over-do the salads with cherry tomatoes, you could even make Red Ice Cubes, by just making a cherry flavored Kool-Aid mix.

Fresh Strawberry Mousse

1 cup boiling water
1 box (4 serving size) strawberry gelatin
3/4 cup sugar
1 pint strawberries
2 egg whites
1 3/4 cup frozen non-dairy whipped topping, thawed
Preparation -
Pour the boiling water into a blender. Add gelatin and 1/2 cup sugar. Cover and blend at low speed for about 30 seconds or until the gelatin and sugar are completely dissolved. Blend in the strawberries, a few at a time. After all strawberries have been added, blend on high speed for about 20 seconds or until the berries are pureed. Refrigerate for 2 to 3 hours or until the mixture is thickened.

Place the egg whites in a mixing bowl and beat until foamy. Gradually add the remaining 1/4 cup sugar and beat thoroughly. Continue beating at high speed until the mixture forms stiff peaks. Fold in the whipped topping, then fold in the thickened strawberry mixture. Spoon into 6 tall dessert glasses. Garnish with additional whipped topping and whole strawberries, if desired. Makes 6 - 1 cup servings.

red wine
cranberry juice
strawberries
red food dye - always good for red themed night!!!
parma ham - red-ish
raw meats - not very healthy though
raw tuna! - nice stuff though
red peppers
watermelon
red grapes
cherries
cranberry
lingonberry
red jelly - strawberry jelly
red apple skin

- maybe you could do a red fruits.summer fruits salad for dessert or to go with something like lingonberry mousse?

Starter: Beef tomato and mozzarella slices. Or a nice tomato soup.
Dessert: Red Vodka jellies. Apple, raspbery and strawberry fruit salad?

Or just take the easy option and add lots of red food colouring to everything! You could get coloured light bulbs too to put on a table lamp and make everything look that bit redder.
