There are many, many Filipino dishes. This is one that is close to being a national dish.

Pork Adobo

Ingredients
2 lbs Pork butt or shoulder
2.1/4 cups Water
1/2 cup Soy sauce
1/2 cup Distilled white vinegar
4 cloves Crushed garlic
1/2 tsp Pepper
1/4 cup Sugar

Preparation
Dice your pork butt or shoulder into small cubes, mix in other ingredients in a large saucepan and bring to a boil, then lower heat and simmer for 60 minutes, or until pork is tender.
Serve with rice and Adobo sauce.

Indeed, there is. I would say, ADOBO is the ethnic Filipino dish.
The word adobo is even accepted in Scrabble. It is in the dictionary. Another interesting Pinoy Dish is what they called "KILAWIN" It is a concoction of raw fish-fillet, vinegar, hot red chilli, salt and peper to taste. For side dish, Acharang Papaya and the Acharang Ubod (from Coconut) are fabulous.
For merienda or even dessert - what about Puto kutsinta, Bibingka, Suman and Puto bongbong. Most considered great delicacy and a 3-Course Dinner by itself, the so-called BALUT. It is A Hard Boiled duck's egg. The juice is the Soup; the chick is the Main Dish and the yoke is the Dessert.

Adobo is considered as one of the ethnic dish which consist of soy sauce, vinegar, garlic and some bay leaves simmered either in pork, beef or chicken.

Paksiw may be one too - coconut milk and vinegar with fish or pork
Sinigang-- many different varieties that has different flavors

Lumpia - filipino style eggrolls
Kare Kare - stewed oxtails in peanut sauce
Lechon - roasted pork with crispy crackling skin
Halo Halo - a sweet dessert with beans, ice, tropical fruits and tapioca.
Dinuguan - a stew made with pork blood
