Generally, mediterranian cuisines are very healthy. That's anything from Southern Portugal around to Morroco, but exludes northern Italy, where the terrain makes butter rather than olive oil the predominant cooking and serving fat.

Try Japanese cuisine. It is very easy to get hooked on it! Especially sushi and miso soup, nothing is fried and seaweed is full of vitamins and antioxidants.
Don't listen to Keana, my Vietnamese friends call the rolls you described spring rolls and the ones she talks about are called Vietnamese egg rolls.
Another great thing you might enjoy are healthy burritos from Mission Burritos or another place like that. I always get them in a bowl with a tortilla on a side so I can limit my carbs intake. You can choose what goes in your burrito from different kinds of meat, veggies and sauces. If you are feeling really adventurous try some grilled fish tacos, they are yummy and good for you as well.
Kudos to you for being open minded and wanting to try new things! Most of the people will never discover new flavors because they just are to afraid to come out of their "burger zone". Have fun with it!

Beef is beef no matter what country it comes from. Cabbage is Cabbage right?
Pretty much the same rules apply to ethnic foods as to domestic foods.
Fried is bad, trans fats are bad. Baked is healthier, veggie are good... Don't eat too many simple carbs at night before bed.
I think that of all the ethnic menu's that have the least amount of bad food on them, Arabic food seems to incorporate healthier choices...
They also use a ton of Garlic which has a lot of health benefits. Garlic is good for your Circulatory system. :)

I think Indian food is healthy too if made with less spice and oil.
I love this healthy recipe of Saag Meat (Spinach Meat). Here is recipe for this:
Boil the spinach leaves & grind to a fine paste. Heat oil and fry onion paste until golden brown.Add ginger and garlic pastes and fry for 2-3 minutes. Add the mutton pieces, chilli powder, khus khus and salt. 'Bhuno' over medium heat until meat is browned. Add the zeera powder, dhania powder, tomato powder, tomato puree and the ground spinach. Simmer & cover, stirring occasionally until mutton is tender. Sprinkle with garam masala and serve hot with boiled rice. Read more at :

Korean food tends to use a lot of steamed, pickled or marinated vegetables and less meat. They also have a lot of soy products like tofu. It's becoming more trendy among the health conscious.

I think you are reffering to "summer rolls" spring rolls are fried and summer rolls are rice paper wraps....
You might like thai or Lao food........ try the papaya salad and sticky rice with bbq chicken YuMMmy!!
