Does anyone have an authentic Fattoosh salad dressing recipe? I have been searching for a good one but have yet to find it. Also, if you have any good middle eastern recipes in general I would love it. Especially the garlic dip that you get with the chicken tawook! Thanks! This is one of my favorite types of food. Any recipes welcomed.

here is my Nana's/moms award winning recipe for kibbe
It delicious!!!!

INGREDIENTS

800g (1 3/4 pounds) very finely ground sirloin
50g (1/4 cup) onions
500g (1 pound) cracked wheat (soaked for about one hour in fresh water)
Few mint sprigs
Salt & pepper
**baharat spice blend
Stuffing

300g (10 ounces) ground lamb meat (any)
50g (1/4 cup) onions
50g (1/4 cup) shortening
100g (1/2 cup) pine nuts
Baharat

2 tablespoons freshly ground black pepper
1 tablespoon ground coriander
1 tablespoon ground cloves
2 tablespoons ground cumin
1/2 tablespoon ground cardamom
2 tablespoons grated nutmeg
1/4 tablespoon ground cinnamon

METHOD

Put the first 6 ingredients in a food processor, and reduce to a paste.

Stuffing: Fry the onions, pine nuts and the meat in the fat, until done. In a baking pan (shallow pan, or sheet pan) press first a little of meat, spread all the stuffing over it, and then apply another meat layer over. Bake at 190° C (375°F) for 40 minutes or more.

Baharat: Put all into a jar with a tight-fitting lid and shake. This makes about 1/2 cup and will keep for about 1 year.

If you like you can play with other spices and add paprika and/or sumac and /or cardamom.

I can give you my recipe for chelo w/ tahdig (sp??) which is basically just rice with a crunchy/chewy crust. I dated an Iranian for 4 years and this is BY FAR the best way to do rice, I think. It's easy to do and you're steaming the rice not boiling it so the great flavor is right there. (you need to go for the jasmine or batsmati for the best taste but white will do/ won't work w/ brown)
I can actually give you the entire chelo kabob recipe which is prob. a national 2nd after gormesabsi. E-me if you want it, not at my home 'puter right now.

For the Fattouche salad, they basically put Lemon juice, olive oil, Sumac & salt. It's very sour acidic dressing but so good!

The garlic dip for the shawarma is called Toum I think, its garlic, salt and oil whipped til thick. Split the pita bread in two, turn them inside out like back to back cooked side in, Spread the toum on one side like butter, top with marinated grilled chicken, lamb or liver and roll up.
