Mexican food is an arrangement of meats rice and beans very high in fiber most are made like tacos or burritos or served with the tortillas on the side as bread would be served with the meal.

it depends on the region like for example i was in oaxaca and there is awesome cuisine there. I had pumpkin flower quesadillas, delicious mole, tlayudas (huge quesadillas with many more ingredients), etc. I went to Veracruz and the seafood is great there, i had the snapper and a cocktail called "vuelve a la vida" (come back to life). Michoacan has great cabrito and just all types of roasted meat.... in the isthmus they have a type of shrimp cakes and in every region they have different types of cheeses... however if ur grabbing a quick bite there are always the taco vendors inthe street that can sell tripe or brain tacos (they're delicious don't let the name scare u away) picadas, empanadas, tortas, tamales, sopes, etc.. it really is paradise there, (bring antiacids)

"Vegetable Soup's" answer is an accurate one. My husband is from Central Mexico and we visit his family there a lot. The cuisine varies greatly by region. Would you believe that my husband had never eaten a burrito until he came to Southern California? They eat different meat, soups, seafood, lots of vegetables, even spaghetti. My mother in-law even served us a chicken cordon bleu type of stuffed chicken. It was tastey, but far removed from my idea of Mexican food. Rice and beans are cooked in various ways. But the one stereotype that I saw that was true: Almost all meals were eaten with fresh tortillas. Mmm...fresh tortillas.

True Mexican Food is hardly like what we have in the USA. What has become known as Tex-Mex is actually hotter than authentic Mexican dishes.
In Mexico Restaurants will typically serve a bowl of Chiles separate from the Entree for each individual to season their own dishes as they like. Some like it hotter than others. The dishes themselves are rather bland as compared to what we are used to.

This is a really "general" questions, not to say .... Anyway. Well we do it Mexican food, but it really depends on the region. Some of the most traditional dishes are pozole, mole, menudo, tacos, chiles en nogada, chiles rellenos, enchiladas, tortas, the variety is huge not to mention all the regional dishes. Be more specific and maybe I can help you.

depends on the region. each region has its own cusine.
Tacos are unlike what most people in the US and the UK think they are...they're typically shredded meat (chicken or beef) in a corn tortilla. Nothing else
Menudo is a tripe stew that is fabulous....
rice and beans are of course a staple, as are numerous varieties of chile peppers.
If there's anything specific you have a question about, drop me a line...I'm from the US and know how to cook Mexican (taught by mexicans) and will be happy to share any info.
The city I'm from had a large hispanic population too, so I've eaten Mexican (as well as central american and south american cuisines) numerous times, as well as travelled extensively in those regions.

they make real enchiladas. Tortas, tinga, posole, and real Mexican food, not the stuff you find in the restaurants (my wife is from Mexico, and she did not know what Nachos or Burritos were till she got here, and was shocked that they were lised as "Mexican"
