Ideally something much thicker than soymilk. Also, is there anything vegan that can be used to obtain the sour flavour of yogurt/buttermilk?

Soy yogurt is great, if you can find it. You can make yoru own buttermilk from soy milk: just add 1 tbsp of lemon juice to 1 cup of soy milk, and wait a few minutes, stir. I use this all the time in baking.

There are vegan yogurts out there. Some large grocery stores carry them, or if you know a good specialty store in your area, they should have it.
