I LOVE these.

CHILLIES RELLENO
8oz. whole canned green chilies
1 lb. grated Monterey Jack cheese
2 eggs
1c sour cream
¼ tsp salt
1/8 tsp pepper

Remove seeds from chillies. Cut pieces flat. Put 1 layer in greased 8x8” pan. Sprinkle with ½ of the cheese.
Spread rest of chillies then the rest of the cheese. Beat eggs until frothy. Add sour cream, salt and pepper. Mix. Pour over chilli layers. Bake uncovered in 350F for 45 min, until set. Serve hot. Serves 6.

Oh, boy, that will require a list:

1. Arrachera steak with frijoles charros and chilis toreados. (marinated skirt steak "northern style")
2. Cochinita Pibil (pork marinated and slow cooked in a sauce of ground aciote seeds, Yucatan sour oranges and garlic served with a habanero and purple onion sauce)
3. Mixiote (mutton, rabbit or chicken made with a mole coloradito or adobo sauce. It is traditionally wrapped and slow cooked in a "mixiote" - a thin outermost layer of a maguey leaf, looks like wax paper - but this is now illegal to use due to the threat of extinction of the maguay plant - so most of us use tin foil)
4. Huachinango a la Veracruzana (red snapper cooked in a sauce of tomato, jalapeño, onion, garlic, Mexican oregano, cilantro and lemon juice in the pan, oven, or wrapped in tinfoil on a grill!)
5. Carnitas (a whole leg of pork deep fried in a huge vat of boiling oil then chopped and served in tacos with guacamole, chili sauces and cilantro with onion or served whole with rice or potatos or even sliced in "tortas" - Mexican sandwiches)

Tacos! I try to eat few flour tortillas.. More white corn.. I do eat rellenos burritos once in a while..

Of all the Mexican dishes that I have tried here in Cyprus - and not many are available - my favorite is fajitas; coming to the table sizzling hot, with all the dips and sauces.
