I'm finding prices for live seafood cos i'm opening up a restaurant in singapore... like lobster, tiger prawns and mud crabs.

Pricing any good, but in particular fresh foods, is extremely elastic in that it's a function of supply and not demand.

The supply of any fresh food is impacted by a huge number of factors, including the weather and the season.

In order to get an idea of your projected costs, including all of the costs of opening a restaurant in any given place, your better off talking with other restaurant owners in that area, particularly if you speak with those who are offering similar types of menus and similar levels of service.

This is the reason why, particularly for a seafood restaurant, it's not a good idea to have a fixed menu. Have a fixed theme, but adjust your menu daily, based on what's available to you that morning, and within your budget.

There is no guarantee of catch in fishing, hence prices will always be based on the catch of the day and demand on a particular day. Plus you want live seafood which will call for specialist suppliers.

Start talking to your purveyors and distributors. It will always be market price to them unless you buy frozen. Get a deal with them. Price will also depend on the seasons and how big the catches are. That's why restaurants always say Market Price for the price on the menu.
