i AM A FULL FLEDGED OMNIVORE BUT i DO EAT VEGETARIAN FOOD OFTEN (AND SOME ARE EVEN VEGAN)
HERE ARE SOME OF MY FAVOURITE RECIPES:
(sorry about the caps lock, I should look up a the screen when I am typing)
CURRIED PUMPKIN AND SWEET POTATO SOUP
1 ½ tsp veg oil
1 tsp garlic
1 cup chopped onion
2 ½ cups chicken stock - use a substitute
8oz (250g) peeled and chopped sweet potatoes
1 cup canned pumpkin
1 ½ tsp curry powder
½ tsp coriander
1 tsp honey
½ tsp ginger
¾ cup (175mL) 2% milk - use a substitute
In nonstick saucepan, heat oil; sauté garlic and onion until softened, approximately 5 minutes.
Add stock. Sweet potatoes, pumpkin, curry, coriander, honey and ginger; reduce heat, cover and simmer until potatoes are tender, approximately 40 minutes.
Puree until smooth. Return to saucepan stir in milk until blended.
My Grandmother's recipe and my favourite chocolate cake (vegan or not)
CHOCOLATE CAKE
1 ½ cup flour
3 tbsp cocoa
1 tsp soda
1 cup sugar
½ tsp salt
1/3 cup oil (I prefer canola.)
1 tsp vanilla
1 tbsp vinegar
1 cup cold water
Put dry ingredients in a bowl. Make a well in the center.
Put the oil, vanilla and vinegar in the center.
Pour the cold water over and stir to mix.
Pour batter into 8x8 pan.
Bake ½ hour @ 350F.
HUMMUS
Blend:
¼ cup water
1 cup drained chick-peas
¾ tsp crushed garlic
2 tbsp olive oil
¼ cup tahini
In food processor until creamy.
Sprinkle with 1 tbsp chopped fresh parsley.
SPAGETTI SQUASH
1-2 lbs squash
1 tbsp margarine
¾ cup onion
2 tsp crushed garlic
1 ½ cup mushrooms
¾ cup diced green pepper
250mL tomatoes
1 tsp each oregano, basil
½ cup parmesan cheese – use a substitute
Pierce squash. Microwave squash 8-10 or until soft (or bake 350F; cut lengthwise, put face down in water 40-50 until soft).
Discard seeds. With fork scrape off spaghetti like strands.
In fry pan melt marg. Saute onions, garlic, gr pepper for about 5 min. Add squash cook for 2 min. Add tomato sauce, and seasonings. Combine well.
Place in baking dish and sprinkle with cheese. Broil for 2 min or until browned.
102 cal 4g fat
SWEET POTATO, APPLE AND RAISIN CASSEROLE
1 lb sweet potatoes, peeled and cubed
¾ tsp ground ginger
¼ cup honey or maple syrup
3/4tsp ground cinnamon
2 tbsp margarine, melted
1/4cup raisins (or dates or apricots)
2 tbsp chopped walnuts
¾ cup cubed peeled sweet apples
Steam or mic potatoes just until slightly underdone. Drain and place in baking dish.
In small bowl, combine ginger, honey, cinnamon, margarine, raisins, walnuts and apples; mix well. Pour over sweet potatoes and bake, uncovered, for 20 min or until tender.
Prepare casserole without apples up to the day before. Add apples, toss and bake just prior to serving.
AND A QUINOA RECIPE WOULD BE A GREAT ADDITION - SUCH A GREAT FOOD

This is great, and even non vegetarians and vegans like it....
Cheesy Pasta Bake
Ingredients (use vegan versions):
1 box Mori Nu tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of vegan gourmet mozzarella
spices: parsley, basil, garlic
optional: cayenne
Directions:
Cook the spaghetti halfway. You don't want it to be mushy once you bake it.
While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.
Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.
Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.
Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.
Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.
Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.
Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.
It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.
Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.
Serves: 4
Preparation time: 30 minutes
I like to add some black olives and some mushrooms, but you can add prectically any veggie you like. Spinach, yellow squash, eggplant, and zuchinni are all great in it.
You will probably need to make a double batch if there are going to be a lot of people.

Check out the vegan society website which has lots of vegan recipes. Also there's viva and the vegetarian society will state which recipes are vegan. You need to ask her what she would like to eat as some vegans don't eat honey, garlic and spices, quorn. As long as the food tastes good the meat eaters will be happy to try it but have obvious meat food for them too. Check out products by Redwoods who make veg*n food. Have you considered the drinks? Alot of wine and beer are not veggie but you should be able to buy some at your local health food shop. A standard off license wouldn't know. Maybe a large company like Waitrose would know which alcohol is vegan.

Here is a recipe that is cheap, easy, and good for a buffet.
"Haystacks" (i.e. build your own taco salad)
Bag of vegan tortilla chips, crumbled and put on bottom of bowl
Cooked lentils mixed with tomato sauce and taco seasoning
Or refried beans, or other bean of choice
salsa
tomatoes, olives, jalapenos, onions, lettuce, any veggie topping
This is a build your own taco salad thing. You can use whatever beans and veggies you like so that people can pick. You can even make a tofu based sour cream or vegan cheese sauce.

Stuffed and/or garlic mushrooms, Brown rice with peas and mixed peppers, mixed salad, Potato,celerriac and sweet potato wedges with a tomato and herb or salsa dip, nice big mixed salad, Chilli non-carne and rice, boiled new potatos, vegan tortilla chips, houmus and vegan pasta in both tomato and arabiatta sauces. Vegetable kebabs, vegan chocolate brownies, fruit salad, vegan energy bars and vegan ginger snaps !!!

If you're feeling lazy then most shop bought vegetable samosas and vegetable spring rolls are suitable for vegans!
Sainsbury's samosas are definitly vegan and taste great!

You can make a vegan dip by blending some silken tofu with some garlic and lemon juice (and even add herbs such as parsley and chives) then serve it with thin strips of vegetables.

French Bread Pizza
Ingredients
red pepper finely chopped
green pepper finely chopped
yellow pepper finely chopped
onion finely chopped
mushrooms thiny sliced
sun-dried tomato paste
pizza sauce
vegetable oil
french baton
Slice a French Baton in half and slice each half through long ways.
Preheat an oven to 200 degrees.
Fry the onion in some oil until soft. Then make up the pizza. Firstly spread it with sun-dried tomato paste. Then add a layer of pizza sauce (I often use pasta sauce instead).
Sprinkle some onion on top. Then spread over some mushrooms. Sprinkle over some peppers.
Bake in the oven for 10 minutes.

Mushroom Filo Bites
Ingredients
4 large closed cup mushrooms
4 tablespoons vegetable oil
2 tablespoons sauce flour
unsweetened soya milk
salt and pepper to taste
filo pastry
Preheat the oven to 200 degrees.
Make the filling using the mushroom sauce recipe. Take 2 sheets of filo pasty and cut them into a square shape. Damp the edges of one and stick the other on top. Then damp the edges of the top piece. Put a spoonful of the mushroom sauce mixture on one side of the pastry leaving a gap around the edge.
Fold the other side over to make a triangle shape and press along the edges. Once you have used all of the mixture, place them on a greased baking tray and bake for 5 minutes or until golden brown. Serve immediately.

Roasted Red Pepper Tarts
Ingredients
vegan puff pastry
red pepper
sun dried tomato paste
Pre heat the oven to 200 degrees.
Grease a baking sheet. Roll out the pastry and cut out with a pastry cutter. Spread with a thin layer of sun-dried tomato paste and top with thick slices of the pepper.
Bake in the oven for 10 minutes until the pastry has risen.
