Urad Dal is black gram/black lentil. Different recipies for different dishes... Its very nutritious however.

Just a little background adding context. Dal is most associated with the foods of India. Hindu's have developed an incredible cuisine based on what we would call lacto-ovo, basically no meat. Dal can be either soupy or thick enough to be eaten with chapati bread (flour tortillas cousin). Tear off a piece of bread, scoop up some spicy Dal and pop into your mouth.
