I need vegetarian recipes. Dairy products and egg are okay to be used, but other than that no meat products. Fake meat should not be used either. They should be easy to make, but at the same time look/seem gourmet. A slew of recipes or websites would work. Thanks!

I love this one from www.vegweb.com, they have great recipes for anything and everything....

Cheesy Pasta Bake

Ingredients (use vegan versions):

1 box tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of mozzarella
spices: parsley, basil, garlic
optional: cayenne

Directions:

Cook the spaghetti halfway. You don't want it to be mushy once you bake it.

While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.

Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.

Then, grate your mozzarella. Use 1/3 to 1/2 of a block of mozzarella. Put aside.

Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.

Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.

Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.

Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.

Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.

Serves: 4

Preparation time: 30 minutes

I also like to add some mushrooms and some black olives. But you could add practically any veggie that you like. Squash, eggplant, or broccoli could be tastey.

I also love to make Fajitas.

Use some fresh portabella mushrooms, onion, garlic, and bell pepper. Saute in olive oil or butter and then put in in some warm tortillas.

Both are delicious and gourmet tasting

Indonesian Bean Curry Stew

2-cups rice. Basmati is good either white or brown. Whatever you choose, follow pkg instructions

1 Tablespoon olive oil
1 cup chopped onion
1 Large bell pepper, chopped
2 teaspoon chopped garlic
1-15-oz can light red kidney beans
1-14.5 oz can stewed tomato
1-15 oz can black beans
1-15 oz can chickpeas (garbanzo beans)
3 tablespoons peanut butter
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon fresh ginger---bottled is ok
¼ cup chopped cilantro (optional)

Start the rice...pkg instructions.

Heat the oil in a deep nonstick frypan or skillet. Add the onions, pepper, garlic. Keep the pieces big, except the garlic.

Cook long enough so the garlic is not raw, but not more than golden brown

Add the kidney beans and juices, as well as tomatoes and juices. Break up any large tomato pieces.

Drain the the black beans and chickpeas in a colandar. Rinse well under cold water. Drain

Add black beans, chickpeas, Peanut-butter, curry-powder, cumin, ginger to the skillet. Mix gently so not to break the beans.

Reduce heat and simmer for ??? At least 4 minutes or until rice is ready.

Add cilantro--this is optional.

Serve over rice

Here's an awesome casserole. One of my son's favorites.

Colorful Veggie Bake

3 cups frozen cut green beans, thawed and drained
2 medium green peppers, chopped
6 plum tomatoes, sliced
2-3 cups shredded cheddar cheese
3 cups chopped zuchini
1 cup bisquik
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
6 eggs
1 cup milk

Layer beans, peppers, tomatoes and zuchini in a well greased 13inx9inx2in baking dish. Sprinkle half the cheese on top. In a small bowl, combine bisquik, salt, cayenne pepper, eggs and milk. Mix until just moistened. Pour over vegetables. Bake, uncovered, at 350 degrees for 45-50 minutes. Sprinkle remaining cheese over the top. Cook for another 10 minutes, or until fork in center comes out clean and cheese on top is melted. Let stand for 10 minutes. Serves about 12.

Grilled Mixed Vegetables

1 Summer Zucchini
2 leeks, halved and cleaned
1 yellow pepper
1 orange pepper
1 red pepper
:2 tablespoons, plus 1 tablespoon of extra virgin olive oil 4 garlic cloves
1/2 cup of chicken stock (125ml)
1/2 cup of sliced, pitted Kalmata olives (125ml)
1 cup of feta cheese (250ml)
1 cup of crushed tomatoes (250ml)
1 teaspoon of freshly chopped oregano (5ml)
1 teaspoon of freshly chopped basil (5ml)
Salt & Pepper to taste

Preheat grill to medium high - approximately 375 degrees F (175 degrees C).

Cut the vegetables in to large equal sized portions and place in a large bowl. Drizzle with olive oil and toss to coat. Add oregano and basil and toss lightly again. Season with salt and pepper.
Oil the grill lightly with vegetable oil. Place the vegetables on the grill and grill for approximately 2 minutes per side. If the grill begins to flare, shift the vegetables away from the flame so they do not burn. Vegetables should be lightly browned but still slightly crisp.

Remove the vegetables and allow to cool. Cut the cooled vegetables into bite sized pieces.

Meanwhile add the remaining tablespoon of oil to a large skillet over medium heat. Add garlic and saute for 1 minute. Add the cut up grilled vegetables. Stir in the tomatoes and chicken stock and simmer until the mixture thickens and the vegetables are tender - approximately 15 minutes. Add the olives and crumble feta on top. Serve with crusty bread.

I too am vegetarian, I use alot of the artificial meats, but if you prefer not to use them a good vegie fajita that I make ( and my husband loves)Carrots, bell peper, sweet onions, zucchini, broccoli, cauliflower ( or whatever vegies you like) marinate in a terriyaki sauce ( if you like it a bit sweeter with a slight maple flavor I add about 1 tbls of brown sugar) saute with a bit of butter in the pan and then cook for about 15min in the sauce or until tender. I serve them on tortilla's with sour cream ( my husband likes it with mozzarela cheese on top). Corn and rice for side dishes.

This is very good....
VEGAN CHILI RECIPE:
Ingredients:
olive oil
2 large yellow onions, diced
2 cloves garlic, minced
1 red pepper, diced fairly large
1 green pepper, diced fairly large
2 (28-oz.) cans crushed tomatoes
1 tablespoon cumin
1/2 cup ground carrots
1/2 cup ground celery
5 mushrooms cut into quarters
1 package frozen corn
2 cans black beans (or any other kind of beans you like - chickpeas work well, too)
1 1/2 cup picante sauce
1 t. Kitchen Bouquet, browning sauce
salt to taste
grated cheddar, if desired
cashew nuts, if desired

Directions:

Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.

Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.

Serve with grated cheddar and cashew nuts, if desired.

This recipe for Vegan Chili serves/makes 4

2 cups water
1 cup uncooked long grain rice
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon chili powder
1/8 teaspoon pepper
6 tablespoons reduced fat sour cream
DIRECTIONS
In a large nonstick skillet, saute the onion, celery, green pepper, mushrooms and garlic in oil until tender. Stir in the tomatoes, water, rice, soy sauce, parsley, salt, paprika, cayenne, chili powder and pepper.
Transfer to a 2-1/2-qt. baking dish coated with nonstick cooking spray. Cover and bake at 350 degrees F for 65-70 minutes or until rice is tender and liquid is absorbed. Top each serving with 1 tablespoon sour cream.

1 (9 inch) unbaked pastry shell

2 tablespoons butter or margarine
1/4 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
Pinch ground cinnamon
5 eggs
1/4 cup milk
1/4 cup grated Parmesan cheese
DIRECTIONS
Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees F for 5 minutes. Remove foil; bake 5 minutes longer. Reduce heat to 350 degrees F.
In a skillet, saute the onion, green pepper, tomatoes, zucchini and mushrooms in butter. Add the curry powder, salt, pepper and cinnamon; mix well. Spoon into crust.
In a bowl, beat eggs. Add the milk and cheese; mix well. Carefully pour over vegetables. Bake for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
