A raita is a yogurt salad popular in India. Raitas are a combination of thick, whole-milk yogurt and various chopped vegetables like cucumbers, eggplant, potatoes or spinach, or fruits such as bananas or tomatoes; seasoned with black mustard seeds, garam masala and herbs such as chervil, coriander, cumin, dill, mint, parsley or tarragon; designed to be a cooling counterbalance for many spicy Indian dishes. You can search the interent to find a variation that is to your liking. The version you have had may be a "house recipe" - ask the server next time you are there if they can give you the recipe or at least what is in it.

Either one bunch fresh mint chopped, or 1.5 teaspoons dried mint. 1/4 pint natural yoghurt. 1/2 mild red onion peeled and finely chopped (optional). Mix ingredients together in a glass bowl, cover and refrigerate for at least 1/2 hour to marinate, longer if possible. This is known as mint raitha, and goes well with onion bhajis, pakora, samosas etc.

Raita use Greek yogurt and grate cucumber dry off excess water and add a little black pepper and off you go....

easy peasy!! make it all the time ;-)
live yoghurt, fresh mint (chopped) and then add sugar to tast,mix it all together and there you go!
Orinstead of mind, strain cucumber through a sieve (get rid of the excess water, add the cucumber pulp to live youghurt and add sugar to taste... enjoy ! x
