Tradiotional Alfredo sauce uses raw egg to make a creamy sauce.
1/2 c. tasty cheese
1/2 parmesan cheese
1-2 eggs, lightly beaten

Cook pasta al dente, drain. Tip back into pot. Working quickly, add cheeses and egg and toss through. Season to your liking with salt and lots of freshly ground black pepper.

Substitute the cheese if you have something different, but it should be something that melts and stretches well, and something that has lots of flavour.
