There are VERY few restaurants on the island but the home we'll stay in has a gourmet kitchen. We'll all be home for supper since there's not much in the way of a night life on the island either. Make them easy but fun. I have some seafood idea's and we'll do a lot of grilling so idea's for the grill would be great too. Please don't send me to links, I can do that on my own. I want your tried and true recipes.

Cioppino (italian seafood stew - esstentially a tomato vegetable stew with every kind of seafood you can get your hands on in it. Add whole crab legs and mussels in shell and its fun to eat with your hands. Serve with hand towels)

We love to cook whole pork loins on the grill. Just slit them do a rub that you either make or buy and rub it down add just a little oil so it doesnt dry out and wrap in foil and put on the grill. You just leave the grill on med. heat and turn it over now and then until it is done. You can also add veggies right to this pouch or you could put them in a pouch of their own and since they don't take nearly as long wait until your loin has only a little while before done. Serve this up with a nice salad and yummy!

Also,

You can buy cornish hens or whole chickens and do the beer chicken where you clean out the carcus and then put the can of beer and the stand up there it seasons your chicken and makes is super moist ......serve that up with grilled corn on the cob and a strawberry or orange spinach salad.....another great meal.....good luck

You haven't said where you are going, please do.

If I were you, I would research recipes using the freshest local ingredients and cook simple food: grilled fish, local fruits & veggies.

Order a cookbook from Amazon about the local cuisine of that island.
