There are probably a good number, but of course you get into issues of who is/isn't a vegetarian (ovo-lacto, pescetarian, vegan, etc.) and who is and isn't a Jew (Orthodox vs. Conservative vs. Reform vs. non-practicing vs. atheists, etc.) and the conflicting rabbinical teachings about the necessity of eating meat to avoid the sin of rejecting a goodness of the Creator, and so on.
I don't believe that there are any Jewish Vegetarian societies or anything, but perhaps there should be!

It is doubtful there are any "observant" vegan Jews, though maybe some vegans who were Jewish by birth. Don't the scriptures tell Jews which animals they should eat?
