This dish contains cold buckwheat noodles, cucumbers, and crab (or shrimp). It is tossed in a very light sauce. My question is, what is that sauce? and where can I find a recipe? I have been dying to make this dish! Thanks!

Without knowing exactly how the sauce tastes, I can't be certain. Have you tried talking with a cook at a Japanese restaurant? Often times they will tell you what's in it. I have found that some of my favorite Japanese foods have rice wine vinegar in them, or mirin, or they have plum sauce in them. Those are two flavors that you can't get from any other ingredient.

If you are refering to Yakisoba, you can cheat and use worchestershire sauce and soy sauce.

If you have access to a japanese cookbook you will find the recipe in there. Food Network, Epicurious, Cooking Light, and Bon Appetit all have onling recipes.

It would help if I knew what the name of the dish was. You may also try finding the website for Kame or Kikkoman. They may have recipes.
