This is one of my favorite enchilada dishes

Chicken Enchiladas Suiza

12 corn tortillas
2 cups shredded chicken
6 oz. chopped, roasted and skinned green chiles (fresh is best, but you can use canned in a pinch)
3 cups fresh spinach
1/2 cup chopped onion
1 cup crema or sour cream
4 oz. cotija, crumbled
5 oz. evaporated milk
15 oz green chile sauce
Warm oil to dip tortillas in
PREPARATION:
Heat oven to 350 degrees.
Heat 1 tablespoon oil in a pan over medium heat and cook the onions for about 1 minute. Add the spinach and cook it for about 5 minutes until leaves are wilted. Fold in the chicken and green chiles.
Set aside.
In a saucepan, heat creama, evaporated milk, cotija and chile sauce over low heat until sauce is smooth.

Prepare a 9x13 inch baking dish by coating the bottom with a thin layer of sauce. Dip a tortilla into the warm oil to soften it and place it into the pan. Place about 1/4 cup filling down the center of the the tortilla and sprinkle with a tablespoon of Asadero or Queso Quesadilla cheese. Roll the tortilla up and place seam side down in dish. Repeat until all tortillas are used.

Pour remaining sauce over the top, and sprinkle with the crumbled cotija. Bake dish for 15 minutes to melt the cheese.

My favorite to prepare is an enchilada casserole--it is easy. I love enchiladas, but don't always have the patience or time to make them in the traditional way, so make a casserole.
What I do (and I learned this from a Mexican friend of mine) is get all the materials you are going to use in your enchilada together. I usually make chicken and veggie style--the veggies usually change depending on what I have or what I am hungry for.
Then I take my pan that I would use for lasagna, and start layering my enchilada supplies in the pan, sort of a Mexican lasagna. I put some enchilada sauce on the bottom of the pan, to help cut down on sticking, then dip the tortillas in sauce. Then just start layering, tortillas, cheese, veggies, cut up chicken....ending with a top layer of some sauce, cheese and green onions. (I cut up all the veggies in little pieces).
Put in the oven at 425F and heat until the cheese melts, usually 45 minutes to 1 hour, depending on how many layers you have. And if you have not left it in long enough, just slice it off and pop in the microwave for a minute to finish off the melting of the cheese.

Jalapeno Poppers

12 jalapeno peppers, sliced in half lengthwise, seeds removed
8 ounces cream cheese, room temperature
2 eggs, beaten
2 tablespoons water
dash salt
1 cup plain dry breadcrumbs
oil for deep frying


Fill jalapeno pepper halves with cream cheese and press halves back together. Combine eggs, water and salt. Dip jalapeno peppers into egg mixture and into breadcrumbs. Place on a cookie sheet and freeze for 2 hours.
Heat oil in deep fryer to 370°. Deep fry peppers in batches for about 3 minutes, or until golden brown. Transfer jalapeno poppers to paper towels to drain.

Arroz con Leche- A Mexican Rice Pudding

3 cups whole milk
1 can sweetened condensed milk
2 teaspoons vanilla
1/4 teaspoon salt
2 cinnamon sticks
1/2 cup raisins, soaked in warm water to soften
1 cup rice, short or medium grain

Bring milk to a simmer. Stir in rice, add in cinnamon sticks and simmer until rice is softened, about 15-20 minutes. Remove cinnamon sticks and stir in remaining ingredients. Bring to a slight simmer and cook for an additional 20 minutes or until almost all of the liquid is absorbed and rice has a pudding-like consistency.

The best thing is when someone teach them to you, i think if you just try to do it from a book or whatever, you are not gonna get it right. Try to get a Mexican friend or someone that knows how to cook food from Mexico. That's just my opinion you don't have to do it.
