It depends on how many accounts you have and which version of MS Office/Outlook you are using.

Assuming 2003 at home with more than one e-mail account:
You can set up a different signature to use with each account in >Tools>Options>Mail Format tab.
You can set up a different signature for each account you send from and also whether to use the signature when you reply and/or forward mail.

For example, when you compose a new mail and change the account it is going to be sent from, the signature will change to what you have specified for that account.

Similarly, when you hit reply or forward, depending on the settings the appropriate signature will be inserted.

Assuming you already created the signatures, it as simple as opening a new message > Insert > Signature > Name of Signature.

OR there is an 'Options' menu in the Outlook toolbar that also have signature options.
