The most colours I have counted on a flag are 5......there may be ones out there with more but the link below is a good place for you to waste a few minutes counting the colours on the various ones.

The Cayman Islands' flag has six (red, white, blue, green, yellow and black). Don't know if that's the most though.
P.S. Just looked at South Africa's and that has the same six colours.
