I think you definitely should. Get the Twinrix one to be on the safe side. I went to China recently and had a great time but it was a relief that I had all my shots after I saw some of the hygeine conditions. You will experience fantastic food but you want to know that you are protected from contamintion from people not washing their hands. On the train from Shanghai to Beijing, I walked through the dining cart and past the kitchen. The guys were smoking cigarettes over the food and scratching their butts. I got the distinct impression that they probably didn't wash their hands either! Enjoy your trip, I wanted to make it to Xi'an to see the terracoota warriors but I didn't have the time in the end.

Yes!! I am sure that I got one, it was either hep a or hep c can't remember which one though.
And you will be fine with just the first one. I waited until I got home to get the second one.

one is not enough. there is a period of time ( i think 6 months) between them. 2 are required for full protection, Look into the CDC for required vaccinations for any area that you travel to.
