I used 4 oz. of grapeseed oil and about 1.5-2 oz of spearmint/peppermint. I slow cooked it in my crock pot for 3 hours on the lowest setting, and stirred it every 15-20 minutes. Now, after it's all said and done, how come the oil doesn't smell like mint?

Ok, the leaves were freshly dried leaves. :)

leave it in there at room temperature for a few WEEKS - and pack it so that the herb is PACKED. You haven't had enough time, or enough of the herb.

Or you can cut to the chase and add a few drops of essential oil.
Thats the quick easy way.

Hmm...did you use fresh or dried mint? And did you bruise the leaves well first if it was fresh? I normally use fresh herbs with bruised leaves for infusions, though some people say you get better results from dried (I don't like straining the bits out).

was it a liquid mint or real mint? If it was real mint leaves you need to crush the leaves in some kind of bowl and then put them in.

i would also say the alchol is much more efficient for essential oil extraction
