He seems to love his carbs. (just like his momma). Breads, crackers and such.
He also eats scrambled eggs, bananas, apples, yogurt, carrots, yams, mashed potatos and meatloaf. Does anyone have any other suggestions to help widen his variety? I am doing my best to feed him as much organic as I can too, so please keep that in mind.
Any bit of input will be so appreciated.

You are doing an amazing job at providing variety! Okay here we go: I fed my son wheat pasta with organic tomato sauce and he loved it. Also steamed veggies that are tender bite sized were a big hit mixed with pasta. He loved the rotini type of pasta which I cut into smaller bites for him.
We like cheese quesadillas - a mexican grilled cheese - makes most kids pretty happy. Steel cut oats are awesome and there's an instant type at most Whole foods stores that is really good. My son also loves cream of wheat and it's full of iron so that's another good one.
Pita bread and hummus is always well received at our house. Anything that can be dipped into something else is a big deal. A squished avacado and some pieces of fresh tortillas that are nice and soft.
Baby pizza: on a cookie sheet lay out pitas or small tortillas, put some tomato sauce on them and add grated parmesan, shredded cheese and any other toppings you wish. Cook at 400 degrees until for about 6 - 8 minutes. You will be loved for this one!

oh my godness, I'm having the same problem.. I think the carbs thing is so hard because of course when they start eating, the easiest things to feed them are breads, pasta, rice etc.. Just think baby food... and try to make the same sort of things.. Lots of veggies and lots of fruit.. Meat that can be mashed! Good luck!

try making fries out of sweet potatos, cut them, sprinkle them with olive oil, and bake them.
Also my son loves minestrone soup, I strain the liquid out and he eats the veggies, beans, and pasta. Amy's organic soup is great!
Cheese quesadillas were a favorite at that age too. He also loved cheerios or any dried cereal to snack on.

Sounds to me like he is eating pretty darn good! Lucky boy to be eating healthy with as many "problems" with what to feed our children these days...

spaghetti, cheese cubes or chunks (my daughter loves the sargento's snowflake shaped cheese), chicken alfredo is a huge hit with a lot of kids, avacado is actually VERY commonly loved by kids in this age group, pb&j sandwiches, mac & cheese

Don't forget organic raisins, be sure to supervise so he doesn't try to put them in his ears or up his nose.

well peeled orange sections,honeydew melon,seedless watermelon(cube or ball your melon so its finger food)yo baby(it is A special yogurt for baby's.Remember that for best brain development baby's should have fat.Milk ,egg, cheese,etc.
Cube up mild cheese.Baby's love finger food,if you dare,give your little one A little bag or cup for their snacks, they love it.
