Marinate your scallops in a mix of 1/2 cup soya sauce, 2 tbls brown sugar and 1 clove garlic (marinate for about 1 hour). While doing that, I find it helpful to fry my bacon a little (about half cooked). Wrap each scallop in 1/2 slice of bacon, spear with a toothpick, drizzle with remaining marinade, and bake until cooked (about 20 min). I find this works really good too with water chestnuts for your non seafood fans. Mmmmm bacon!

Easiest Recipe EVER!!!!

Preheat oven to 425
Cut your bacon into thirds, take a piece and wrap around scallop, hold together with toothe pick. Then dredge them in a mix of brown sugar and cayenne pepper.

Bake for 20 minutes or until golden brown on top.

Allow for 4 to 6 Scallops per person
40g (1/2 cup) pre-grated parmesan
4 middle bacon rashers
1 garlic clove, thinly sliced
2 (about 600g) desiree potatoes, peeled, chopped
25g butter
60ml (1/4 cup) milk
1/4 tsp salt
Sprinkling of brown sugar
2 1/2 tbs chopped fresh chives
1 bunch (about 200g) broccolini, ends trimmed

Method
Preheat oven to 220°C. Line a casserole or baking dish with non-stick baking paper. Place the grated cheese on a plate. Add the scallops and turn to coat. Place 2 slices of garlic on top of each scallop. Wrap bacon around each scallop. Secure with toothpicks. Place in the casserole dish and sprinkle with any parmesan remaining on the plate. Bake in preheated oven for 20 minutes until cooked and golden on top.

Top each scallop with a sprinkling of brown sugar to caramalse.

Meanwhile, cook potatoes in saucepan of boiling water for 10 minutes or until tender. Drain and return to pan with butter, milk, salt and chives. Roughly mash and cover with lid to keep warm. Steam broccolini over a saucepan of simmering water for 3-4 minutes or until tender.

Remove the toothpicks from the scallops and serve with the chive mash and broccolini.
