Brown Rice Pilaf
2 tablespoons butter
3 tablespoons onion, finely chopped
1/2 cup brown rice
1 clove
1 very small bay leaf
1/2 teaspoon salt
Dash freshly ground pepper
1 cup chicken stock
Preheat oven to 375 degrees
In a small ovenproof saucepan, melt but do not brown 1 tablespoon of the butter. Add the onions and cook over a low heat about 4 minutes, stirring occasionally.
Pour in the rice and mix well. Add the clove, bay leaf, salt and pepper. Cover rice with the broth to a level of 1/3 inch above the rice.
Bring to a boil, cover and put in the oven for about 35 minutes or until tender and liquid has been absorbed.
Fold in remaining butter with a fork. Adjust seasonings and serve.

Brown rice is great made into a pilaf to serve as a side.
Cook rice in rich beef broth til desired tenderness. In a large skillet,add a couple tablespoons butter or olive oil and saute mushrooms, either chopped, sliced or pureed(I have a few in my household that don't like mushrooms when they see them but eat them all the time and just don't know it-pureed), add a minced shallot, and half package frozen mixed vegetables. Stir in rice and mix thoroughly and heat through. Salt and pepper to taste. This is also good made with chicken stock. I mix different rices and grains together just so it is more attractive. Never any complaints, never any leftovers.

Saute some onions, garlic and finely diced carrots. Add chicken broth for you amound of water. Bring to boil. Add your rice.
When it's finished add 1/2 cup of frozen green peas and a TB of soy sauce.

When you cook it cook it in broth instead of water. I usually use 3/4 chicken or vegetable broth and 1/4 water when I cook it.
