I like it simple. Put it in a skillet with a little bit of olive oil, fry it up pretty quick to get it done just enough, then put in a can of diced tomatoes. Simple. Tasty.

I have a foolproof, very easy, 2 minute prep chicken recipe.
Preheat the oven to 350.
Put 1-2 Tb olive oil, some salt & pepper, 1 pressed clove of garli, a few rosemary leaves & juice of 1/2 lemon or lime (or a splash of white wine) in a covered dish. Add the boneless, skinless breasts of a chicken, turn to coat with oil mixture, cover and bake for about 30 -35 minutes til done.
I did this tonight in fact, but added potatoe in 3/4 inch cubes and cooked it a little longer.
Once I put this in the oven and set the timer, I can go back out and work on a project til I remember it. I've had this in the oven for an hour and a half before and it was still ok. You can vary the seasonings, add vegetables...and it also works for fish.

Chicken Mole
Makes 8 servings
Ingredients:
1/4 cup sesame seeds
1/2 cup slivered almonds
1 dried New Mexico or California chile
1 large onion, chopped
3 cloves garlic, crushed
1/3 cup raisins
2 tablespoons chile powder
1/2 teaspoon ground coriander
1/4 teaspoon ground cloves
1/4 teaspoon anise seeds, crushed
1 cinnamon stick
4 pounds chicken thighs
1 14-ounce can diced tomatoes (unflavored!)
2 cups water
1/4 cup tomato paste
1/4 cup tequila
1 ounce unsweetened chocolate, chopped up
Preparation:
Toast the sesame seeds in a small, hot frying pan until golden brown, watch them closely. Remove from pan. Put almonds in pan and toast them to a golden brown. Don't cheat on these steps, the golden brown color imparts a lot of flavor. Remove from pan. Put the chili in the pan and heat until it is softened well. Remove from pan.
In a six quart oven proof pot, with lid, combine onion, garlic, raisins, chile powder, coriander, cloves, anise seeds, cinnamon, chile, almonds and sesame seeds.
Rinse the chicken, pat dry, and place on top of the mix. Pour in tomatoes. Pour in 2 cups water. Mix tomato paste and tequila, pour over the chicken. Cover and cook at 325°F for 2 hours. Check every 20 minutes to make sure there is still liquid in the pot.
When chicken is tender, remove it to a plate. Remove cinnamon stick and the stem of the chile. Put the rest of the mix in a food processor and chop it up until it is smooth. Add the chocolate and pulse it twice. Wait a few minutes for the chocolate to melt from the heat of the mix. Then whirl the mixture a few more times until well blended.
Remove the skin and shred the chicken into a large serving dish. Pour the mole sauce over it. Prepare to enter heaven.
Serve with corn tortillas and more tequila. Cooked chayote squash makes a nice accompaniment.

Healthy Chicken Kiev
Ingredients:
3 tablespoons reduced-fat margarine, softened
1 tablespoon snipped fresh parsley
1/8 teaspoon garlic powder
6 small boneless, skinless chicken breasts
2 cups Cornflakes
2 tablespoons chopped fresh parsley
1/2 teaspoon paprika
1/2 cup skim milk
Mix margarine, parsley and garlic powder and shape into a rectangle (3 x 2 inches). Cover and freeze until firm, about 30 minutes. Remove excess fat from chicken and flatten each to 1/4-inch thickness between waxed paper. Heat oven to 425 degrees. Cut margarine into 6 pieces and place 1 piece on each chicken breast. Fold sides of chicken breasts over margarine and secure with wooden toothpicks.
Mix Cornflakes, parsley and paprika. Dip chicken into milk and then evenly coat with Cornflake mixture. Place chicken breasts seam side down on a baking dish that has been sprayed with nonstick cooking spray. Bake uncovered about 35 minutes or until chicken is done.

I like to cut it in strips and put a little olive oil(light) in a skillet and sear the breast for 3-5 min. Then I add geen peppers(bell) and onions. I let that fry for about 2 min and then I put a little water in and then put a lid over it and let it steam itself. If you have SAZON spice available where you live put 1 Tbl of that in also. If not I will use Italian seasoning. I think the best way to find what you like is experimenting with the spice.

4 bone-in (i use boneless) chicken pieces (1-1/2 lb.)
1-1/2 lb. potatoes (about 3 med. potatoes), cut into thin wedges
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup KRAFT 100% Grated Parmesan Cheese
1 tsp. Italian seasoning
PREHEAT oven to 400°F. Place chicken and potatoes in 13x9-inch baking dish.
TOP with dressing; sprinkle with cheese and Italian seasoning. Cover with foil.
BAKE 1 hour or until chicken is cooked through (180ºF), removing foil after 30 min. Sprinkle with chopped fresh parsley, if desired.

If you're using boneless skinless chicken breasts, try this:
Put three or four large boneless skinless breasts in a crockpot. Pour a large jar of enchilada sauce (I like Pace) over the top, and smimmer on low heat for 6 hours. Thenshred the chicken and you can use it for burritos, enchiladas, tacos, tostadas, etc.
You can also do this using frozen breasts on high heat. This is wonderful for a busy-day option!

A lot of times I marinate it and then bake it in the oven. I bake it at 350 for 27 minutes and it comes out perfectly tender and juicy every time.
I like to marinate it in salsa and then top each breast with a spoonful. Bake it for 22 minutes at 350. Pull it out and top each piece with cheese (whatever kind you like) and then finish baking for the last 5 minutes. It is soooo good!!

i like to marinate mine in italian dressing or balsemic vinegrette. marinate overnight then bake 45 minutes @ 350 or grill. i also like to make salsa chicken.
6 chicken breasts
1 1/2 c. salsa
1c. water
1/4 c. brown sugar
2 tbsp. spicy brown mustard
shredded mozzarella or provolone
place chicken in baking dish sprayed w/cooking spray. combine remaining ingredients & mix well. top chicken w/salsa mixture & bake 45 minutes @ 350. remove from oven top w/cheese & serve once cheese is melted
