They do show up from time to time, but the good ones aren't cheap and the bad ones are often so bad, that you'll lose thousands just getting the sheetmetal repaired properly.
The good news is Chrysler has started making repro metal for these again and new quarters and trunk floors, as well as fuel tanks are available again directly through Dodge. Year One has a lot of other neat stuff to restore these rare cars.
I assume you mean 1970-1972 as Dodge didn't make a 1969 Challenger. Also don't neglect the 73 or 74 models. They were all great, however the 1970 seems to be the most collectible year.
You may find a better deal than eBay by going to http://www.recycler.com . Since it's not an auction site and the sales are private parties, you won't pay the highest dollar. Also don't forget your local Auto Traders, major newspaper classifieds, or even just taking some slow drives around town to look for: "for sale" signs. You might get lucky. Last, don't forget charity car sales sites, like Cars For Causes, etc...
On E-bodied Mopars, the main thing to watch for is trunk and quarter panel rust and bondo from previous accidents. Also if possible make sure the one-piece molded door panels, high-back buckets and original steering wheel are there as those things are commodities. Most of the other stuff, including engines, trannies, decals, etc... can all be found pretty easily. Early Mopars are pretty easy to wrench too so you shouldn't have any major issues.
Good luck finding nice resto material.

If you can't find a project car locally, try eBay. Right now there are around 50 Challengers from junk project cars to show cars.

I'd try Craigs List. If you don't find one for sale, advertise you want one.
Good Luck!
