a crisp has a crispy topping made from oatmeal, flour, butter and sugar.a cobbler has a soft almost cake like topping made of flour, sugar ,eggs ,milk and poured on top .however in different parts of the country i,ve run into desserts called cobbler but had biscuits laid on top of the fruit filling or even actual pie crust. so whatever. its all yummy

A crisp has a toping that usually includes oats and brown sugar (amongst other ingredients). A cobbler has more of a biscuit like topping (a smoother batter).
