Creamy Lemon Asparagus Risotto
Serving Size : 6
2 Tbsp. olive oil
1 medium onion, finely chopped
2 cups Minute White Rice, uncooked
1/2 lb. asparagus, cut into 2-inch pieces
2 cups chicken broth
2 Tbsp. Light Cream Cheese Spread
Grated peel and juice from 1/2 of a medium lemon
Heat oil in large skillet on medium heat. Add onion; cook and stir 2 min. or until tender. Stir in rice, asparagus and broth. Bring to boil. Reduce heat to low; simmer 5 min.
Add cream cheese spread, lemon peel and juice; stir until well blended. Serve with grilled chicken or shrimp.

30-Minute Almond Chicken
Makes: 4 servings
8 boneless skinless chicken thighs
1/4 cup Zesty Italian Dressing
1 cup chicken broth
2 cups green beans, trimmed, halved
1 cup instant white rice, uncooked
1/4 cup PLANTERS Sliced Almonds
TOSS chicken with dressing in resealable plastic bag. Add chicken with dressing to large nonstick skillet on medium-high heat; cook 4 min. on each side or until browned.
STIR in broth; bring to boil. Cover. Simmer 10 min. Add beans; cook 5 min. or until chicken is cooked through.
REMOVE chicken from skillet. Add rice and almonds. Remove from heat; cover. Let stand 5 min. Serve chicken over rice mixture.

You could make some fried rice. Take 2 eggs and scramble them in marargarine, add some slice mushrooms (or leave out if not to your liking), add some finely chopped onion and add some minced garlic and toss in with the egg and cook until eggs are just done. Add a small can of peas and carrots drained or you might want to add only half if you are making a small batch. Dump in the rice mix until well blended and then add some soy sauce to taste. Garnish with sliced green onion. You can also add any left over roast or other meat you have on hand for extra flavor.

Use the rice as a side to steak. Cook the steak and put a pat of butter on it. I don't know why, but there's something about a pat of butter on top of steak that makes it taste REALLY GOOD, and makes it look like it came out of a fancy restaurant.

make a shrimp scampi over rice.add browned hamburger w/or w/o onions and peppers. add some pasta sauce and cooked sausage.cook and brown some potatoes and cut up small and add to rice with some broccoli.
you can do almost the same things with rice that you can do with pasta.
